    This is a good one, make sure you wrap your springform tin in a few layers of foil as they can leak a little when placed in a roasting tin of water and who wants a soggy bottom :D

    I used digestives and a shake of cinnamon and ginger for the base

    Have friends coming around tonight, made the base last night and trying to make the cheesecake. I have followed my recipe - single cream, soft cheese, tin of ? milk - upstairs now and can't remember, lemon zest. Says to whisk until thickens - still really runny, but looking at the ingreds not sure which would thicken it - any suggestions, am running out of time?
    I'm not a failure if I don't make it, I'm a success because I :tried!

    thanks, didn't say eggs in the recipe but am open to ideas.

    If you have some, my unbaked cheesecake recipie calls for gelatine to be added. That would set it (no good if anyone is veggie though)

    Is it a baked cheesecake? Does it have condensed milk in?

    If it's got condensed milk in it, when that's whisked with lemon juice it will go thick, I've used it for a lemon meringue pie recipe before. It will then firm up further when baked.

    I was at a cookery demo last week and this was 1 of the recipes

    Melt 5oz butter add 12 oz biscuit crumbs smooth out in a tin but don't press down
    whisk 1 large can of condensed milk till it turns white add 1 pint of double cream and keep whisking.It doesn't take very long to go thick.
    Then add the juice of 4 lemons and 4 limes. It sets in the fridge in about an hour and doesn't need baking.
    It feeds about 12 and is very impressive - I got so many brownie points when I dished it up to the family.
