Cheesecake Recipes and questions?

Thanks both of you!
Well it's done and it's now in the fridge. I did put it in the freezer for about half an hour or so, but that was just because I tried to make it a bit fancier (usually my downfall!) by doing a layer of white chocolate cheese/cream mixture first, then a layer of dark choc mixture on top-so a double chocolate cheesecake with a bit of luck! I put it in the freezer so the white choc layer could set a bit before I put the dark choc on.
So...next question...how on EARTH will I get it out of the tin??!!
Thanks again for the help and encouragement-you're all great.

sounds deliciously evil!
Hmmmmm - is it a springform tin? If not i would use a spatula to go round the edges and sense out how loose it is. There is a risk of it not coming out in one piece of course. WHat i would do is probably keep it in the tin and fridge so its hardened well before you try. Even present to OH in the tin if you are scared of it falling apart? I'm sure OH won't mind. After all, he gets home made cake! x

Thanks zippychick,
Yes it is a springform tin but I'm still worried it'll all just stick to the sides when I take it off, leaving a deformed cake instead of the lovely perfectly round one with the two coloured bands of chocolate that I have in my mind (like anything ever works out like that in real life though! Haha!)
Hmmm...he might get it in the tin at this rate!

Take the narrowest bladed knife that you have, dip it inot water, and carefully run it round the inside of the tin. That'll just release it. Then carefully undo the springform and take it away :T:rudolf: Sheep, pigs, hens and bees on our Teesdale smallholding :rudolf:0 -

Ooooh gosh ok...makes me nervous just thinking about it! I'm sure the two layers will smudge together but that can't be helped...why did I do that?! Haha.
Bless, my little man (age 3) has just come down from his nap and said, 'Oh Mummy I think I can smell that birthday cake. It smells SO yummy. It smells so yummy I could just eat it!' Haha bless. Hope it tastes as good as it smells then!

OK here it is! It's not as even as the picture in my mind but it'll do (tee hee!). I'll put a few candles on it tomorrow and it'll be fine. At least he'll definitely know I made it myself! Haha!

I've making a desert to take to friend's house tonight and I think I've ruined it! can anyone help?
It's meant to be biscuit base topped with whipped double cream which has melted white chocolate folded into it, as well as berries. Biscuit is ok, whipped cream ok, folded choc in and added berries and now the cream mixture seems a bit odd. It's a funny texture now, little lumpy not smooth like it should be (kinda cottage cheese-esque!).
Have I ruined it?
It's a desert I used to make as a kid so have no recipe to follow.
