This is the recipe I was looking at. I'm planning to make a "rehearsal" one for my daughter and myself - you know just to check how good it is- and then make it for a some friends I'm inviting for a meal!

Philly type cheese would be fine. I often use a combination of cream cheeses depending what I have in and what I can get hold of, including mascapone, curd cheese, quark, ricotta or drained cottage cheese. I absolutely love that recipe! I always double the amount of butter and biscuits and when it has finished cooking, I turn off the oven, open the door and leave it in there until it has completely cooled. Then I put it in the fridge for at least 12 hours. Perfect cheesecake!Slimming World - 3 stone 8 1/2lbs in 7 months and now at target :j0

I used sherry instead of Maderia wine. Since found out that 1 cup = 8 fl oz = 225 ml (in case anyone tries it).
And broiling is grilling.

I have made before but the base wasn't very crunchy was wondering what I could do to make the base more crunchy. The last time I made this I cooked the base for a bit longer but still didn't make any difference. Any suggestions?0 -
