You could make a lemon meringue pie instead and that way you only need a shortcrust pastry base.Grocery Challenge for October: £135/£200
NSD Challenge: October 0/140 -
200g soft cheese (full fat or low fat)
142g pot of double cream
200g pot of fromage frais (full fat or low fat)
Large (150g) bar of white chocolate
Grated rind & juice of 1 lemon
To make:
Make your favourite cheesecake biscuit base (I use crushed HobNobs and melted Lurpak) and press into the bottom of a loose bottomed cake tin. Put in fridge to chill while you make the filling.
In a large bowl put the soft cheese , double cream and fromage frais and mix well with a wooden spoon. Add the lemon rind & juice and mix in.
Break the chocolate into chunks and put in a microwave proof bowl, nuke for 2 minutes until melted. Stir with a fork until smooth and beat into the cheese mixture.
Pour over the biscuit base and regrigerate for 2 hours before serving.:D0 -
Hi,
I am going to make a cheese cake tomorrow. The recipe calls for cream cheese. Do they mean mascapone or are there other types of cream cheese that can be used?
I presume it needs to be salt free.

You should be able to buy ordinary cream cheese (you may need to go to the deli counter), but you can make cheesecake quite effectively using philadelphia or own-brand equivalents if you can't get cream cheese. I wouldn't recommend mascarpone, as it is a sweet cream cheese, so may end up making it a bit sickly.0

I would just go for full-fat Philly. The low fat versions don't really work in cheesecake. Or, if you can get the stuff from the deli counter I think that generally has even more fat in it than Philly, which is even better for cheesecake.0

If it stays in one piece then I will photograph it. I bet its a disaster. It is for my OH to take on her visit to her family at the weekend. Will have to make two so I can try it.
Decided to use the base from the Rachel Allen one but using strawberries with a strawberry compote topping. Topping from this one:
