    I always use Nigella's Lime and Chocolate cheesecake recipe but substitute the lime with lemons instead. You can also use whatever biscuits you like in the base. Lemon cheesecake is lovely made with ginger nuts as the base. It is a baked cheesecake and by far the best recipe I've found (and I've tried many over the years).

    This one's easy
    Make biscuit base using digestives and butter or ginger bix and butter, press into loose bottom cake tin. B eat 2 packets of full fat cream cheese until smooth, stir in 140 gr caster sugar and cooled (but not set) lemon jelly made with 150ml water. Add juice and zest of 2 lemons made up to 100ml. Make sure everything is blended in, then fold in 140ml of whipped cream (not too stiff). Carefully spoon over biscuit base and leave in fridge overnight.

    This one - although not officially a cheesecake as there isnt any cheese in it, is so simple and delicious

    3oz or 75g butter melted, mix with 6oz or 175g crushed ginger biscuits - put into a greased flan dish and out in fridge

    Lightly whip 1/4 pt or 150ml double cream, stir in a small can on condensed milk, and add juice and rind of 1 lemon.

    Beat until blended, put on top of the biscuit base and chill until set.

  • Sharp Lemon Cheesecake

    Serves 8

    FOR THE BASE


    6oz (100g) Digestive Biscuits, crushed
    3oz (50g) Butter, melted

    FOR THE CHEESECAKE


    1 X 1Pt (600ml) Packet Lemon Jelly
    Juice of 1 Lemon
    12oz (350g) Full Fat Soft Cheese
    4oz (100g) Caster Sugar
    5 fl oz (150ml) Whipping cream, whipped

    TO DECORATE


    5 fl oz (150ml) Whipping Cream, Whipped
    Pared rind of one lemon

    METHOD


    Lightly oil and 8” (20cm) round, loose bottomed cake tin or spring release tin. Separate the jelly into squares. Dissolve in 150ml of boiling water then add the juice of the lemon to make up 300ml. Put in a cool place until the jelly is thick and nearly set.

    Meanwhile mix together the ingredients for the base and spread over the bottom of the prepared tin, pressing down evenly.

    Mix the soft cheese with the sugar and the almost set jelly and then fold in the whipped cream. Turn into the tin on top of the crumbs and put in a cool place to set.

    For the decoration, cut the pared lemon rind into very fine shreds with a sharp knife. Blanch in boiling water for 1 minute, then rinse under the cold tap and dry thoroughly on kitchen paper.

    To serve, loosen the sides of the cheesecake from the tin and push up the base or remove the spring release tin and slide cheesecake on to a plate. Spread the top with a thin layer or whipped cream if liked and pipe rosettes of whipped cream around the top edge of the cheesecake. Decorate with the shreds of lemon rind.

  • This may sound silly, but i cant find a recipe anywhere!!
    I want to make lemon cheesecake, but i dont have any biscuits. Anyone have any ideas?

    I'm no expert but do you have oatmeal biscuits? perhaps you could add a spoon or two of sugar to the biscuits, crush as you would normally and bind together with melted butter/margerine.

    I make a homemade icecream/cheescake. Haven't quite got a name for it but here it goes.

    Crush digestives and mix in melted butter/margerine
    Press the crushed biscuites into a pyrex dish whatever shape you have
    Mix together a pot of whipping cream until thick but not buttery like at all
    Mix in a tin of condensed milk
    Add 2 teaspoons and the rind of a lemon to the mixture
    Pour ontop of the biscuit base and freeze overnight or for a couple of hours at least.

    This really is divine. It's sweet but the lemon really adds the flavour.

  • Maybe cracker crumbs mixed with sugar and a little butter (can't vouch for this).

    Or, make a crumble topping but put it on the base!
