I have made before but the base wasn't very crunchy was wondering what I could do to make the base more crunchy. The last time I made this I cooked the base for a bit longer but still didn't make any difference. Any suggestions?
How far in advance are you assembling the cheesecakeDo it right at the last minute and the base will stay crunchy

It's a baked cheesecake. How do you assemble one of those at the last minute?I was born too late, into a world that doesn't care

Hi all,
I've never posted on this board before but hope you can help me!
It's my hubby's birthday tomorrow so little man and I, in true MSE style, plan to make Daddy a birthday cake. He loves cheesecake so I thought we could make a chocolate cheesecake and have found an easy 'no bake' recipe which I hope I should manage ok with, not being very talented in the kitchen department!
The problem is that I have to make it today as we have plans to be out and about on his birthday tomorrow and I'll have no time. The recipe says I need to freeze the cheesecake for an hour, then put it in the fridge for 30 mins before serving.
So my question is, how do I store it until tomorrow? Do I freeze it overnight, then take it out in the morning, or will it be ok if I freeze it for the hour as per the recipe, then keep it in the fridge overnight?
Really sorry if that's a stupid question, but as you can probably tell baking and cooking aren't necessarily my forte!
Thanks in advance!

I would imagine it only asks to freeze for an hour to "set" it, if you freeze overnight it will be frozen solid. I'd freeze for an hour today then keep in the fridge until you need it. After all, most cheesecake in restaurants is kept in the fridge for days and no one is expecting you to eat the whole thing in one go so it'd have to be ok for a while.
You could always look at other similar recipes and see if they suggest storage ideas.June Grocery Challenge £493.33/£500 July £/£500

Welcome  Can you post a link to the recipe, and then maybe we can give better adviceMy cheesecake is a matter of making a base, mixing mascarpone and cream cheese with icing sugar, slapping that on top with some fruit - peasy :T I then chill until required.

I'd make it today, and leave it in the fridge until you're ready to serve tomorrow. No idea why it needs freezing, maybe it's so that the cheesecake will be ready quicker.

Thanks Penny. So you wouldn't bother freezing it at all?
Sorry to be so hopeless...:o

Nope - I'd forget about freezing - the cheese and cream will firm up in the fridge.
You're not hopeless - only by asking questions do we learn to do things :T:rudolf: Sheep, pigs, hens and bees on our Teesdale smallholding :rudolf:0 -
