4l water to 250g of salt is spot on for a 1.5-2kg chicken (assuming you have a large enough bowl/other non-reactive container for brining). Try and avoid using any outsized vessels for this, as you'll just need more brine and waste money as a result. I forgot to say the other day, but the salt, sugar and peppercorns are pretty much the only mandatory ingredients. I personally couldn't imagine tasty roast chicken without the taste of garlic and lemon, but I'm set in my ways!
More than happy to cook for all, after the week I've had, it may need to become a part-time job. After 3 days in Edinburgh, a meal with friends and rugby later on this afternoon, I think I'm about £300 poorer
We had a really fantastic meal at a steakhouse last night which was, sadly, tainted by the bill splitting thing that I've mentioned recently (bills are traditionally split equally between all diners, the birthday boy/girl doesn't pay). I was aware in advance that it was going to work out a bit dearer than usual, so had prepared myself accordingly. I'm not sure that others had.
When the bill came, there were comments and pained faces from one person who had obviously tried to keep her bill down about paying for our own meals. It was a complicated receipt (7 diners, multiple courses and drinks), so I asked that we stick to the 'usual' approach). Now I just feel bad - the person was obviously feeling skint and I dislike the 'system'. On the other hand, it was Mrs E's birthday (I felt like she would have been stiffed) and they're not my group of friends, so I didn't like being put on the spot for calculating multiple split bills on the spot and looking like the bad guy!
I'm probably over thinking this, but why would you come to a restaurant that you knew was fairly dear if you weren't willing to pay? Or, if you are skint, why not explain to your friends in advance and ask that we split the bill because you're saving for a house/wedding/car/whatever? It's an odd group - they'll think nothing of spending £500 to go abroad for a stag/hen do, but they get all grumpy about an extra tenner on their food bill.
Looking forward to a Sunday at home with no spendy activities :j
Setting up a few MB today. A guaranteed £6 for me, Mrs E is doing far better and has been offered what amounts to a free £75 from one of the betting exchanges.0 -
Thanks for water advice. You're responsible for a spike in chicken sales this weekend
Bill splitting is always a nightmare and I understand exactly how you feel. No solution but tons of empathy.

Tried to reply but tied self in knots.
I will settle for "bummer" said with sympathy.0 -
Absolutely - if you don't like/can't afford the system that everyone knows about, sort it out in advance. Don't feel like the bad guy!
I'm chuffed to hear the MB mistake wasn't as bad as you thought - I never quite understood it, it sounded like what you'd done was end up with the money with the bookie, and unable to withdraw it without doing more bets - which is annoying, but not an actual loss. If you book-keeping went a bit awry, though, then yes, the situation you'd have seen would've been horrendous! Its great that you got money put by plus carpet and laminate out of it in the end :j:j:j2023: the year I get to buy a car0 -
Oh crumbs, I may have had a few shandies too many last night
Currently balancing the books after a ruinously expensive week of socialising, I am glad that we get paid next week! Rugby was great fun yesterday, we watched Glasgow dispose of Bath in a most professional manner, the atmosphere was fab.
Today I will mostly be drinking cola to perk myself up and lying on the couch reading the paper0 -
Hope you're feeling more human again!!!
Can I ask a question about the matched betting?
When you sign up to the bookie to get the free bet, do you just use that bookie the once, and move on to the next bookie with a free bet offer.
Or , once you are signed up, do the bookies have free bet promotions from time to time.
I have visions of signing up to 100's of bookies to get a one time only free bet.Early retired - 18th December 2014

Feeling fine thanks Goldie, just got that Sunday evening blues thing that is exacerbated by indulging too much the night before!
The sign up offers from bookies are the low hanging fruit that make you the largest amounts of money quickest. There are, however, various 'reload' offers (i.e. repeat custom offers), weekly offers and occasional risk free freebies. I can comfortably make £20/week with no real effort (taking advantage of 3 or so repeat offers).
MB is good in that you can make a fortune by putting in loads of effort, a bit of pin money with no real effort, and anything in between
If you wanted to start MBing but didn't want a huge time commitment, I'd probably try and sign up for a bookie a week or similar. That should keep you busy for 6 months or so and let you find your feet.0
