Yes, I use tins to make my corned beef hash - keep it in the fridge so when you use it it will be easier to chop. Also (each to their own, but...) I always have a poached egg on top with lashings of ketchup - yummy!!Squares knitted for my throw ~ 90 (yes!!! ISTR the ex-wife-to-be doing a WeightWatchers version, with chopped onion and mashed up corned beef on the bottom, and their usual egg and cottage cheese mix on top.The acquisition of wealth is no longer the driving force in my life.0 -
I make mine like this...
Bake 1 large spud per person for approximately 1 hour.
Meanwhile fry onions until caramelised
Fry some bacon, any will do, then chop into small pieces.
Dice 1-2 apples (unpeeled)
Chop corned beef into small cubes.
When potatoes have had approx 1 hour,remove from oven, scoop out the potato but keep the skins. Mix the potato and the above ingredients together and mash together.
Season the mixture and scoop it back into the potato skins. Bake for a further 30 minutes.
You could top with cheese if you wanted, but I don't bother.
I serve mine witth beans.

I add sage and onion stuffing (dried, not with water added!) sometimes, and shape into patties and fry in a tiny bit of oil to brown them.
I actually always eat mine with baked beans! Lovely!!0 -

I cook mash, but dry (no butter or milk) then mash it in with the tin of corned beef (the fat in it takes the place of butter in the mash) then stick it in the oven and cook till the top is crispy.

My grandkids adore my daughter's corned beef hash and I had to ask her how she does hers - I wouldn't dare to do it differently or there would be a revolution.
Pan of potatoes on to boil and then drain and mash when ready.
Peel and chop 2 onions and lightly fry in veg oil till transparent
Tin of Baked Beans (or 2 depending on how many for) emptied into a sauce pan and warm through.
Mash a large tin of corned beef and add to the baked beans. Mix thoroughly and then add the softened onions and mix again.
Put into an oven proof dish, cover with the mashed potato and put into the oven for half an hour till just browning on top (sprinkle with grated cheese if you're feeling a bit flush!).
Have to admit that I was so very surprised that DD had come up with this 'out of her head' - her own invention (at least as far as she was concerned). She's never been known for her culinary skills!!0
