So many ways!
I peel chop an boil potatoes with a veg stock cube, lots of finely chopped leeks, onion and black pepper.
And a few drops of Tabasco:D
Use just enough water as none is discarded.
While this is cooking, cut corn beef into 1 inch chunks.
When potatoes just done, add corned beef.
Stir for 5-10 mins - DONE!
Excellent with pickled red cabbage or thickly buttered bread.:T
I make a pan of this regularly and freeze portions for lunch.0 -

Do they not taste too dry without liquid?
Better if you put it in the fridge before frying though, makes it easier for the potato to form into patties.0 -
I normally fry boiled potatoes, add chunks of corned beef and then baked beans all in a frying pan.
However, I'm doing it tonight and wondered if this would work as an alternative?
I was planning to line a baking dish with slices of tomato (I have 2 that need using up!), then large slices of corned beef on top, baked beans on top again, then the boiled potatoes. Cooked until the potatoes are going golden and then put some grated cheese on for the last few minutes.
I don't want the corned beef to go too 'mush' would this work do you think?"Stay Wonky":D

A variation that we had as kids was a corned beef hot-pot....
slices of potato layered with slices of corned beef & onion, salt & pepper. Finish with potato, then mix up enough beef Oxo & boiling water to almost cover, then bung in a low oven for about 2 hours.....serve with pickled onions & red cabbage - gorgeous!0 -
I add sage and onion stuffing (dried, not with water added!) sometimes, and shape into patties and fry in a tiny bit of oil to brown them.
I actually always eat mine with baked beans! Lovely!!

My own version of corned beef hash, as opposed to my daughter's which was post No.11, is to do a pan of mashed potatoes. Fry two chopped onions until soft and transparent and add to the mash. Chop up a tin of corned beef and add to the mash/onions. Give the whole lot another good mashing and serve with some carrots, cabbage and gravy.
My mother's version was different again! Peel and chop potatoes, carrots, onions plus any other veg that will go into a pan of stew (swede, celery). Cover with water and cook in a large pan with some herbs and beef stock cubes. When it's all cooked (the potatoes have begun to 'fall' a bit) you open the corned beef and cut the whole lot up into medium sized cubes. Add them to the vegetables and continue to cook until the corned beef begins to warm through. This can be thickened with some gravy granules if necessary. Mum also used to serve it with a pastry crust sometimes or with dumplings. Also pickled red cabbage/beetroot.
So my family has three completely different ways of doing corned beef hash - guess there is no such thing as the 'right way'!0 -
Is it possible to get 'real' corned (ie, salted?) beef in the UK? In New Zealand I used to do corned beef for tea about once a month. But it wasn't anything like the tinned stuff: it was a piece of beef that had been in brine, and it was cooked in water like a gammon. I've never seen it, but Rick Stein does a very good corned beef recipe with a piece of brisket.
My corned beef hash pie is in the oven (my experimental one as detailed above!!) I'll be serving it with an Asda mozzarella and roast pepper flatbread I managed to get for 20p yesterday"Stay Wonky":D

been lurking around the boards for a little while and just wanted to say thank you to the OS board.
i was reading soem of the older posts and the corned beef hash one caught my eye.
now i'd never had it before but my OH said it was nice so i gave it a go. Well, Wow, it was scrummy :j
