Eating out of the freezer and cupboards challenge - part two

I used up five eggs that were over two weeks old, half a pot of cream and half a dozen wonky onions and made some pastry from stores - we had onion tart and half left for today - may go for a small jacket potato and polish off some rather sad salad with itSave £12k in 2025 #2 I am at £9586.01 out of £6000 after August (158.45%)
OS Grocery Challenge in 2025 I am at £2226.88/£3000 or 74.23% of my annual spend so far

I've not posted for a few weeks and I'm just getting back on top of things - we defrosted the freezer over the holidays and I've got my inventory up to date and i'm doing proper meal planning again
Starting from today:
In:
3 RTC chicken breasts
3 RTC cauliflowers (Large ones for 30p each) cut into florets and blanched
Some elderly mushrooms which I chopped and lightly fried, to go in pasta bake next weekend
The cauliflower stalks and leaves chopped for soup
Out:
Some chopped courgette (from the garden)
4 mince pies
Pot of mystery home made soup, should do 3 lunches this week
I'm making a nut roast and was so pleased that the only thing i needed to buy was some mushrooms which I got RTC (the rest of the bag are the ones I've put in the freezer) and I used up about 5 open bags of various nuts which needed using, all chopped up in the blender:j:j

I`d suggest that when you`ve made the mixture, pat it out gently without using a rolling pin before using your cutters and you`re much more likely to have decent risen scones that way. Make sure your oven is on the correct heat and preheated. Persevere- it will get better0 -
