suet help please, im a bit stuck :-)

    Jjust to say that I have used suet that was 4 months out of date to make dumplings and they were fine - when I opened the suet it looked and smelled just the same as usual and I'm sure yours will be okay to use:D

  • 8oz of Suet Pastry

    400g Minced Beef
    1 Onion

    Roll the pastry out into an oblong, then place minced beef and onion on the top. Roll this up like a swiss roll and pinch the ends. You can either bake in the oven on 200c until pastry is golden brown. Or you can steam for Hour and a half depending on which you prefer. My mum used to make this and used to wrap the suet pudding up in a tea towel, but most steamers now will do the job just as well. There will be enough for 2 adults and serve with either gravy or what i like is Heinz beef or oxtail soup or just gravy and mash potatoes. You can of course just use onions instead of Mince beef normally 3 to 4 big ones. This meal is very cheap to make and filling.

    Hello,

    I was wondering if any had any good suet recipes. I'm looking for both savoury and sweet.

    I don't have any eggs, but I can get some.

    I can't stand kidney (found loads of recipes for this),and my partner hates dried fruit with a passion.

    I normally make mince and dumplings, I rubbish at it but thelads seem to like it!

    KEZ try a suet roly poly, you make a standard suet pastry and roll it out into a rectangle they spread on the filling, sweet or savoury, leave a 1" strip all round the edge, moisten the edges with cold water, roll it up from the small end and seal the edges well and wrap first in a piece of greased greaseproof paper with a pleat in to allow the pastry to fluff up, then in a piece of foil with a pleat. Seal all the edges well together to keep the moisture our and either simmer for a couple of hours or steam it for that long too.

    Fillings we like :-
    Mince and onions with an oxo cube mixed in
    Bacon and onion/leek
    Apple and cinnamon and brown sugar
    plums and sugar with a sprinkle of almond essence
    Jam any kind you like
    Golden syrup and breadcrumbs

    I only do dumplings too, but not with mince. I tend to do them with chicken or beef casseroly-type things. You can experiment with herbs in them, and I sometimes put some chopped-up bacon or ham leftovers in too - nice with chicken.
    For a dessert not using dried fruit, you could put your suet crust or dumplings over fresh apples (like for a crumble, only with suet topping.

    I'm not at home at the moment, so can't look out recipes, but suggest that if you have a basic suet crust recipe, it can be used like any "top crust" pastry but baked longer & slower, preferably in a steam - by putting a pan of water in the bottom of the oven, or by wrapping the basin in a cloth and putting in a saucepan of boling water or a slow cooker with water in it.

    A family favourite is "ock'n'dough" where you line a baking tin with suet crust, put in any cleft-over cooked meat, some par-boiled potatoes, thinly sliced onions (or any other vegetables you have to hand) and plenty of gravy (left-over or Bisto). Cover with foil and bake in a slow oven for about 2 hours.

    Similarly you can core apples, stuff with dried fruit and/or sugar with some butter (muscovado best of all) wrap in suet crust and cook in the slow cooker.

    Sussex pond pudding is an old fashioned pudding.

    I normally find replacing the kidney with mushroom (and a little extra meat) in a steak+kidney pudding works out pretty well...
