Banana Ice cream
This is a quick and easy dessert that is great for using up bananas that are a little past their best. It can be refrozen, but I would advise doing it in individual portions, and letting it defrost at room temperature before serving, as it's impossible to scoop. It can be made dairy free by omitting the milk, and best of all it is pure fruit, but children think it’s a great treat!
Ingredients
2-3 bananas
Dash of milk (optional)
Honey to sweeten (optional)
Method
• Peel and slice bananas and spread out on a baking sheet
• Place in freezer until frozen
• Put straight into a food processor/blender, and blend, the mixture will start off lumpy, but after a while will turn creamy and smooth.
• If desired, or to speed up blending, add a dash of milk, and or honey to sweeten.
• Serve immediately
Or you could freeze it in icelolly moulds?

I know you said you don't like banana bread, but this recipe for banana muffins doesn't taste anything like banada bread, they are yum, and everyone I cook them for loves them too and goes for 2nds and 3rds.
Banana muffins
Mash 4 medium sized bananas.
Mix or blend together 4 oz soft marg, 4 oz light brown caster sugar, 2 beaten eggs, 6 oz SR flour, 1 tsp bicarbonate of soda and a pinch of salt.
Add the bananas and mix well.
Pour into muffin cases bake at 160 for 30 mins0 -
Unfortunatley no flour - not got as far as buying the right things yet
But still debating using that chocolate sponge mis because if i froze it would it be ok? what would I freeze it in!

This is my failsafe recipe - can't usually make cake for toffee, but this always turns out prefectly - and it works best with riper bananas

Toffee bananas is my way of using over ripe bananas. Melt some margarine or butter in a frying pan, then add some soft brown sugar , slice bananas and add to the pan cook gently till the sauce has thickened stir occasionally till the banana is coated with the sauce. Very fatterning but very good, it's almost worth letting the bananas go black to make this.0
