Here's my Auntie's recipe for banana cake - great for when bananas have taken over the kitchen, or just for when you have a couple that have gone a bit too brown to eat.
Banana cake
1 egg
150 ml sugar
2 tbsp vegetable oil
250 ml self raising flour
2 tsp baking powder
3 tbsp sour cream
2 tbsp yoghurt
2 – 4 bananas with BROWN skin
Grease and line a baking tin large enough to hold at least 1000 ml (loaf tin or 18 – 20 cm round tin is ok).
Whisk egg and sugar evenly, add oil, and then all the dry ingredients. Then add the sour cream, yoghurt and banana mush, and beat until mixture is nice and even. Pour into tin and bake at the bottom rack in preheated oven at 175oC, gas mark 4 (just a bit below).
When cake is done, leave to cool before removing from tin. Can be enjoyed like it is, but is delicious with custard filling, or custard mixed with whipped cream to “lighten” it up a bit, as this is quite a heavy cake (very filling)!0 -

slice bananas into bottom of an oven dish and sprinkle with chocolate drops, cover with crumble (home made of course!) and cook. Serve with cream. Yummy!
