Another use for 'old' bananas is to peel,chop and freeze in bags. Then buy a tin of strawberries (in juice) costing 34p from Tescos and pour into a blender, chuck in the frozen bananas and whizz. Makes smoothies for 4 people and you can add any other fruit (new/old) or another tin of fruit.
The smoothies taste much better when made with frozen fruit.
Total cost...55p upwards for 4 people, depending on the extra fruit added.0 -
I use this recipe for using up bananas
6oz plain flour
6oz wholemeal flour
2tsp Baking powder
1tsp mixed spice
4oz butter
4oz currants
4oz raisins
1Ripe Banana Mashed
2 eggs- beaten
4tbsp orange juice
Mix flours B/P & spice, rub in butter. stir in fruit & eggs and enough orange juice to make dropping consistency. Put into either a 2lb loaf tin or 7" tin bake @ Gas 4/350F/180C for 1 & quarter hours.

Got carried away in the market on Friday when they offered 2 bunches of bananas for one.
So, what can I do with 8 going soft bananas?0 -
Make a smoothie?
I found half a packet of forest fruits in the freezer and made a smoothie with them, a banana and some apple juice for brekki this morning, was LUSH!!
Or have them for pudding with custard?
Banana bread?

Make banana scones, just the normal scone mix with broken up soft bananas in.
They have them at work and they are divine, highly recommended.0 -
Sliced bananas on toast or cinammon bagel, drizzled with honey, for brekkie/mid morning break

Banana Bread
8oz S.R Flour
3oz Butter or Marg
6oz Sugar
2 Eggs
2 Bananas mashed
2oz Nuts or Raisins (optional)
Cream butter sugar. Add all other ingredients.
Bake in 2lb loaf tin at 170º for 45 min.0 -
