I'm with the kids on this one! Bananas are only palatable to me for a very brief window of time, underripe is awful and overrripe - bleucch! I can't stand anything banana flavoured either. I would definitely be able to taste it in the sultana tea bread, but never mind - you'll be able to eat it all yourself!

I read on a thread somewhere here to use overripe bananas in any cake recipie instead of butter. Can honestly say it's fine. I tried it in a courgette cake and it was delicious, although I would say to use a little less sugar as the banana adds sweetness and I found the recipie a tad sweeter than it should have been

right i have 4 large bananas which are past eating on their own , but i don't wanna just chuck them. any ideas what i make.

i found a recipe for honey and banana cake but that doesn't look nice.

    all ideas appreciated .
  • I had a really nice recipe for banana cake which was lovely, moist and delicious - with banana icing in the middle too... I'll see if I can find it, I don't remember where I found it, but if i remember it was just a normal Victoria Sponge recipe with 2 mashed bananas added, then a mashed banana and icing sugar for the filling. If i find it I';ll add the recipe!

ETA1 - alternatively if you have a breadmaker, you might be able to find a recipe for banana bread.

  • Banana smoothie ?
Don't forget you can skin them, wrap in cling film and bung in freezer for later use in further smoothies etc.

If you cut them into chunks and freeze them before you make a smoothie, it comes out like a cross between a banana milkshake and icecream, mmmmmm

Banana bread works best with soft bananas. I don't like it though so I can't recommend any recipes, but I've just done a quick google and there are loads online.
