On my way to work on Friday morning, I discovered a LARGE box of bananas in my porch, which I think were intended for my DH to take to work (he is manager of a charity which runs a cafe and we do get surprises like this from time to time). Anyway, he'd gone by that time, I wasn't taking this box to him on the bus, and the bananas are now blacker than ever (although still remarkably good inside).
I've made a double batch of banana bread which has used 12 of them and that can go into his work. But I'm running out of eggs, flour and ideas. I know you can freeze them, but I've got no freezer space. And I know you can dry them in a low oven for 24 hours, so I may try that tomorrow after the roast is done. But any other bright ideas?
Alternatively anyone willing to come to NW Bristol for a bunch of bananas, please PM me and I'll get back to you tomorrow (about to swallow my tea and head out to Pride and Prejudice, girly night out!)
