    What about banana custard? My mum used to make it for us when we were kids: just chop up a banana, cover with custard and put in the fridge until set. We loved it. You could also chop up a couple of bananas and put them into a trifle.

    Banana bread works much better with really mushy, old bananas. Enjoy the fresh bananas now. Then, when you've got a couple left over in the bottom of the bowl that look past their best, make the banana bread.

    Hi i'm sure we've been throught this a millin times but i have some bananas that need to be used ASAP i have 2 left what can i do withthem, i already have in the oven a spiced banana loaf which look delish in the book so any more ideas or links for ideas appreciated

    its ok i found the thing to get me into the indexed collections but any other tried and tested recipes would be good

    help my banana bread is supposed to be ready to come out...lovely and brown on top yet still way undercooked on the middle what should i do?

    You could turn the oven down low and give it a bit more time, but keep an eye on it.
    I made banana chutney once - it was lovely - I could post the recipe if you want.

    What about banana milk-shake for the children?

    My youngest is very active and although he eats a lot he's terribly thin. I give him a milk-shake almost every day to try to build him up as he isn't fond of milk on it's own.

    Banana jam recipe

    1 lb cooking apples
    2 large lemons
    3 tablespoons water
    2 lb bananas
    3 lb sugar

    Cut the apples into 1/2 inch cubes. Grate the rind of the lemons, then squeeze out the juice. Put the apples and the lemon juice into a pan and simmer for 15 mins. Mash the bananas and mix with the lemon juice, add to the pan and simmer for afew minutes. Put in the sugar, stir until it has dissolved and then boil until setting point has been reached. Spoon into hot jars and seal.

    Makes 5 lb of jam!

    1. Freeze them whole (peeled of course). Make great ice lolly substitutes.

    2. Sliced down middle; spread with peanut butter and sprinkle raisins or sultanas on top.
