I also make Banana loaf which I cut into slices, wrap in foil and then freeze. Then when I am doing lunch packs/snack packs a foil parcel is included, keeps your sandwiches cool and is defrosted by lunchtime. The money saving benefit is that you then dont need to buy over priced supermarket cake.
Making a cake just for one is great, no one complains if the top does not look quite so and the mixing is quite theraputic LOL

The banana skin does go black if left in the fridge/freezer so peel it before freezing. I've tried freezing unpeeled banana before and had an awful time trying to unpeel a frozen banana :P But the banana itself doesn't go off0 -

You can always take the bananas & yoghurt to share out at your over 60's nights (I read your profile) - perhaps you can find some friends there that would like to get together to benefit from the bulk buys by sharing them out.0 -

My mother in law used to make this on a sunday:
Put nanas in ovenproof dish, pour some rum over them, and sprinkle with dessicated coconut, bake till coconut crisped and nanas soft. Can serve with cream or as it is, luverly mmmmmmmm.
Have you tried the yogurts on your cereal - I used to laugh at the O/H doing it, but it is really nice especially on meusli type cereals.

I always put my bananas in the fridge, the skin goes black but when you look at the banana inside it is perfect!! They keep much much longer this way.0

Just had a thought i will move this over to old style as they are very likely over there to come up with hundreds of uses for your bananas0
