    You've just reminded me that I have some bananas in the freezer taking up valuable space!

    Now, the last time I tried to peel a frozen banana it didn't go too well, and when I tried to defrost one it went black and left a puddle on the side :confused:

    I want to make a cake or banana loaf of sorts to use up these bananas (6) but what's the best way of dealing with them from frozen?
    Helpfully, one of the bits visible on that search page of squeaky's says to peel them before you freeze them. Well, we live and learn! Not that it helps me because I don't have any freezer space right now, as I said, but if DH and I take them into work to freeze we'll know to peel 'em first!

    Actually, that would make sense because you could then check it wasn't bruised inside.

    Thinks: doesn't SarahSaver freeze bananas as well? Worth a PM to her? Or I could be getting confused with the book I looked in which said to freeze them in their skins.

  • Weightwatchers used to recommend freezing a banana for a treat instead of an ice lolly or ice cream. Freeze cut in half with the skin on. When you want to eat, use a potato peeler to remove the skin.

    I have frozen bananas at the moment - peeled then individually wrapped in cling film. Fine for cake making etc. I'm sure they'd be fine to eat as an ice lolly thing, but as I hate over-ripe bananas, I'll keep them for cake making (if I can ever get over the problem of always having too many ripe bananas in my fruit basket anyway :confused:

    Any chance of getting the recipe from them? Or shall I just lob some mashed banana into a scone mix?

    How about trying this tip: buy less bananas.... :p

  • Peel the bananas, cut each one into three pieces. stick a cocktail stick in. Freeze until firm. Melt some chocolate. Dip frozen bananas in the chocolate. Put on grease-proof paper and pop back in the freezer. Yummy chocolate banana lollies.

    I asked them for the recipe, they said that the scone mix comes in ready made as a dough and then they add ripe bananas broken into small pieces (best to go for ones where the skin has gone spotty). They are cooked at the same temperature as normal scones.


    When it's banana scone day I have one for breakfast, one for lunch and take one home for dinner. They really are that good!!
