The one on the Old Style recipe index is yummy. However you do need really mushy bananas (if they're not overripe and you can't wait, freeze them and then defrost them) and also I find that it needs twice as much cooking time as it says in the recipe.
It is delicious though! I took it to a "bring something to share" buffet with lots of very posh people, and it was a hit!Operation Get in Shape

Oooh.............I agree. I went out especially today and bought 10lb bag (£1), of bananas, just to make this OS recipe. Now I have to wait till they get a bit mushy, no room in the freezer.
I made 4 batches last time, and seeing as no-one in my family likes, or eats cake, I cut it into individual portions and froze it.
Now when anyone pops in, I take a piece out.

thanks will look on there last time i made it from another recipe it wasn't cooked in the time then i kept fiddling with it opening the oven etc.. still tasted nice though. cant wait to make some more yummy.Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts0

I went to make a banana and walnut loaf on Sunday. All OK until I went to add the walnuts - all gone. So, I made a banana and brazil nut loaf. Have to say that it's divine - I always have to have 2 pieces
As for buying too may bananas at once - you know what it's like. If you buy 3, then 4 are wanted that day. If you buy 12, then no-one wants themAlso, I tend to buy Tesco value ones when they are still green and you get loads in a bag. My DS2 would eat 3 or 4 some days, if I let him

Does anyone have a trick to quickly ripen banana's, mine are currently quite green but need to be more ripened for the banana cake I want to make - any ideas ? ThanksCurrently on a life sort-out !! ...reducing bills, decluttering and getting into fitness - busy bee0 -
Put it in a brown bag and leave it in the fridge.
This will accelerate the ripening process.0 -
OK, I do my "big shop" at weekends, buy lots of fruit including approx 12-14 bananas. However, the banana fairy tends to eat them all by tuesday( with help from OH & daughter) and then I have to go to local shop to get more. They are more expensive there. I've tried buying more at Asda but they go off by midweek, even though I get green ones. If I keep them in garage in winter, they go grey and are still inedible. So--- does anyone know how to store green bananas for a few days wothout them ripening too quickly, or turning grey because of the cold. It's not a big deal in the grand scheme of things, but anything that can save me money, time & effort is appreciated.:smileyhea A SMILE COSTS ABSOLUTELY NOTHING0

don't put them in a fruit bowl with other fruit, try keeping them in a bowl on top shelf of a cupboard, mine last 5-7 days doing that. hth

Basically, bananas give off a gas which ripens fruit faster - that's why you put other fruit with bananas if you want them to ripen quickly. They are also affected by the natural gases of other fruits. If you leave them in their bag, that's why they ripen faster. So, if left cool, dark and with plenty of air circulating they ripen more slowly.
My MIL always wraps hers in a tea towel and puts them in a cupboard, she swears this makes them last longer.0
