Here's one we use it's absolutely delicious - especially authentic because it uses fennel seeds, is really quick to make and CHEAP!
One or two cloves of garlic
one medium onion
teaspoon of fennel seeds
chillis (optional)
Blitz above in a food processor, then add mixed herbs or basil, jar of tinned tomatoes and salt/pepper to taste. (I add olives here too) and cook.
Add fresh basil on serving.

I took some chicken out of the freezer late last night with a view to using it first thing in a slow cooker curry. Defrosted it on the kitchen side since I wanted it first thing and it doesn't always defrost in the fridge. I wasn't able to do the curry in the end so put it back in the fridge and cooked it in a chicken supreme this evening.
Now, when I went to cut it up, it was pretty wet and a bit slimy. Both hubby and I checked and it didn't smell. I assumed the sliminess was normal with these chicken breasts that came ready frozen. Took extra care to cook it thoroughly though.
When we ate it, it was really salty - does this mean it was off? We had one from the same bag the other day and it was salty too so I'm hoping it's just the chicken itself.
I'm quite worried about food poisoning now and of course have convinced myself that I'm starting to feel dodgy, though everyone else seems fine.
Thanks for your help0 -
if chicken was off it would stink enough to turn your stomach, i presume the glaze they put on the chicken when they froze it is what is salty.0

Salty is not one of the things that would denote off food. I think that you have got a bad batch ( don't mean bad as in off, but bad in processing). I gave up buying ready frozen chicken a few years ago for a number of reasons , but amongst them was the quality. Someone will no doubt be along to give you more detail on the freezing process. I now buy British chicken ( would love free range, but can't afford it,) at 3 for £10 at Asda or Sainsburys do the same offer. Slightly more expensive than prefozen, but not much.0

Hi there people of much knowledge, am looking for some advice .
I roasted a leg of lamb on sunday and kept the left over meat to make into shepherds pie which I did today. Is it all right to freeze the shepherds mix that I have left? It isn't topped with potato, just the meat base.
Would be delighted if I could stash it in the freezer for another day, but just wanted to make sure with the initial cooking, reheating and freezing.

oh you would know if it was 'off' - I suspect the salty taste was due to the preservatives that food producer used.
I too, never buy prefrozen chicken - I prefer to buy whole fresh chickens from Aldi and then cook them and cut them up to freeze portions.0 -
Thanks for the reassuring words and advice!0

Any ideas anyone?
It is cooling in a metal tray ready to pop in to freezer and I am off to bed soon.Sealed pot challenge member no 1057
