pasta sauce recipes

This is probably the dumbest question Ive ever asked on a public forum however....
I bought some tomatoes today as they were reduced, and I thought Id make a yummy pasta sauce with them. I remember one of my old housemates doing it, so I know it can be done LOL
But how? I do have an aversion to ACTUAL tomatoes although i love tomato pasta, Ive never made my own before. I have 2 packs of 6 "normal" and one little punnet mini plum tomatoes.
So, how do I cook it

I make tomato sauce by chopping the tomatoes into small pieces (16ths?) and then simmering it for a while over a low heat (no lid on the saucepan) this reduces it. I also add some mixed herbs for flavour.
If you don't want it too 'tomato-y' then you could separate the seeds off before cooking it and just use the pulp. Also you could blend it (or sieve it) after cooking to get rid of the chunks.

Non cook tommy pesto
Punnet of cherry/plum toms
Tablespoon tomato puree
A few fresh basil leaves ripped up
2 Tablespoons Prudish Olive oil (virgin lol)
A bit of fresh parmesan (grated)
A large crushed clove of garlic
Bit of black pepper
Whiz it all in a blender and stir into cooked pasta.Just run, run and keep on running!0 -
For a cooked pasta sauce I would saute some chopped onions, add a clove or two of crushed garlic then add the tomatoes roughly chopped. Add some tom puree and either some ripped up fresh basil or a sprinkle of dried herbs. Cook it until everything's gone all lovely and tasty (10/15 mins or longer)

EDIT: If you want to skin the tims, plunge them into boiling water for a few seconds, this makes the skin loose and you can peel it off easily.Just run, run and keep on running!0 -

any good recipes for pasta sauce about ?
I just got a jar from iceland for £1 but it says may contain nut traces (my son is allergic).......any help much appreciated;)Kindness costs nothing0 -

I use soup - chicken or mushroom then add more bits to it like peppers or mushrooms chooped gammon etc then top with cheese.

My basic tomato pasta sauce is very simple: fry a chopped onion and some garlic in some olive oil and when softened add a tin of chopped tomatoes and a squirt of tomato puree, add some chopped fresh basil, sugar and salt to taste and simmer for 15 minutes. It sounds vague but it's up to you how much garlic or fresh basil you like. I use this this as a base and you can then add different things in - cream, different cheeses, etc but I haven't tried it as a pasta bake.0

I'll either use a tomato based sauce, or a white sauce.
e.g one pasta bake I do is simply the pasta in a tomato sauce (dice onion, fry in some olive oil, add garlic, tin of tomatoes, tomato puree and simmer for 20 minutes till lovely and thick) with maybe mushrooms, cubed mozzarella cheese and then some grated parmesan and breadcrumbs on top. You could add some cream/creme fraiche to the sauce as well if you want a creamy taste.
Or for a different idea, make a white sauce, add some cheese, fry up some leeks, mushrooms, bacon, mix all together with your pasta and then bake in the oven (again i put parmesan and breadcrumbs on top). Or you could add steamed broccoli and cauliflower to your sauce, that's quite good.
Remember to only cook your pasta for half the time on the packet for a pasta bake, as you are then cooking it in the oven as well and you don't want it to go mushy.0
