Sorry to hijak, but my aunt used to do a mixed seafood on tagliatelle - which sauce could I use with this (I remember it was a white sauce but not sure about Carbonara?)

When I make my salmon pasta, I use cream and white wine. I don't see any reason why you couldn't make a white sauce/roux and add your seafood, perhaps onion, mushrooms or whatever to pad it out. Would that be anything like you remember?0

THanks newgirl, yes it probably was something like that! Will try it one day and see!0

Ok... I can never remember how I did it last time but it's something like soften an onion and garlic; add mushrooms and cook for a couple of mins; then put in your white wine and cream, bubble away to thicken; add whatever herbs and then your smoked salmon until heated through.

2nd is a creamy tomato based sauce. Dice and fry onions, garlic, peppers or whatever veg you have in cupboard ( I also use courgette & spinach ) I then add a tin or two of chopped toms dried herbs and a splash of worcester sauce and tomato puree, cook for about 10 mins then add a splash of cream plus either cooked chicken, bacon, sausages or even tinned tuna add to pasta and top with cheese. yummy am actually doing this for tea tonight lol
I made this for tea tonight (added tuna) and it was so yummy. It will definitely become a regular dish. Many, many thanks to op.

I love Lidls pasta sauce but at 69p a jar I could make an equivalent sauce for cheaper if I had the know how. Do you have a favourite pasta sauce recipe that you are willing to share?0

I make this pasta sauce all the time and love it - also is very easy. It's a Jamie Oliver one from one of his first books (I think):
-chopped garlic in a bit of olive oil
-add chopped dried chilli and bit of dried oregano
-add some tins of toms (I do 3 or 4 to make lots). Leave them whole, don't chop them.
-now you can leave it on low bubbling away for ages to reduce a bit. The recipe says 45 mins I think but sometimes I leave it a bit longer
-season with: a glug of red wine vinegar, glug of olive oil, salt, pepper, fresh chopped basil.
Jamie of course says - best Italian tinned toms and finest extra virgin olive oil but I use value everything. He is also chucking handfuls of fresh herbs everywhere - the sauce still tastes good without (don't always have fresh basil!)
I usually just put it in a container in the fridge, will keep for up to a week (if it lasts that long!) or you can of course freeze it.
HTH and that it's cheaper than the jars !0 -
You don't say what flavour of sauce this is, but last week I made a bolognaise type sauce. Fry 3 chopped onions in olive oil until softened, add 500g butcher's minced beef, fry until browned. Add lots and lots of chopped vegetables (pumpkin, garlic, sweetcorn, pepper, carrot, mushroom, celery, etc, etc) 2 tins tomatoes, red lentils, black pepper, chilli sauce and herbs. I then cooked this on the bottom of the Rayburn all day, stirring from time to time, and adding liquid as necessary.
That'll make at least 12 portions.
