if you are in a hurry you can just brown a garlic clove or a chopped onion in some olive oil, add passata and basil or oregano and cook just the time while the pasta is boiling.
I like a vegetable casserole (ratatouille) with pasta, it can be served hot or cold, good in summer for pasta salads with some feta cheese cubes.
Brown an onion, add cleaned and cubed aubergines, peppers and courgettes (roughly the same amount of any vegetable) add approx. a cup of passata, basil washed and drained capers, olives if you like and cook until the vegetables are tender and the sauce thickened (not too long). You may cook it in the slow cooker, but I don't have one, so I don't know the instructions.0 -
2 tins chopped tomatoes
1 jar passata
2 tbsp tomato puree
bunch fresh basil
3 cloves garlic
salt and black pepper
i onion
1 veg stock cube
chop onion, basil, peel garlic,
put EVERYTHING in pan and bring to boil, simmer for 25 mins. Put through a blender.....done!!!
If you want to make soup after you have blended add 1 carton 125grm of low fat natural yoghurt. The end result knocks spots of Heniz tomato soup!!!0 -

We eat tons of pasta in our house but hubby has put in a request for a spicy sauce. Any suggestions? We like just about everything

If i want a bit of a spicy pasta sauce i use a chilli in the sauce.
splash of Olive oil
1-2 cloves garlic crushed
finely chopped onion
finely chopped (or grated)carrot
finely chopped 1/2 red pepper
finely chopped & deseeded Chilli
Tin Of Plum Toms (try chop them up a little when in the pan)
tomato paste
sugar (to taste)
Basil
Work down the list adding ingredients in that order
Then i use a hand blender to make it more sauce like
I suppose you could try adding some pepperami/salami to the dish to also
add a bit of spice.

For the basic tomato sauce, along with the onions and whatever herb you choose (basil is my fave, rosemary or oregano also work) I add a good slug of a nice XV olive oil. Yummy.0

For a cooked pasta sauce I would saute some chopped onions, add a clove or two of crushed garlic then add the tomatoes roughly chopped. Add some tom puree and either some ripped up fresh basil or a sprinkle of dried herbs. Cook it until everything's gone all lovely and tasty (10/15 mins or longer)

EDIT: If you want to skin the tims, plunge them into boiling water for a few seconds, this makes the skin loose and you can peel it off easily.
My basic Italian "ragu" is essentially the same as this, although I am afraid that I use tinned chopped tomatoes. It is all an Italian would put on their pasta. All I would add is to add dried herbs at the beginning and fresh herbs near the end.The acquisition of wealth is no longer the driving force in my life.0 -

I do carbonara and then serve it with a big salad: Cook spaghetti, drain and toss in 1- 2 beaten eggs (2 do 4 people) till a bit set with some grated Parmesan and some diced pancetta or bacon fried until crisp. Fried mushrooms are also nice if you don't do bacon.
