Try a jar of passata sauce (seived tomatos) They are around 35p for a 700g jar in morrisons, add some basil or mixed herbs, add some onion or shallots and garlic if wanted, some chopped pepporami or bacon adds variation to boring sauces, if the toato sauce it a bit bitter add 1/2 teaspoon of brown sugar to take the edge off it.
Top with grated cheese and bake on semi done pasta0 -
I have dried porcini.
I thought a sauce for pasta would be a good way to use them.
Has anyone got a recipe please?
I would usually make a risotto but don't have any rice!

This is from my sister in Italy:
Dried mushrooms (handful for 2 -3 people)
1 onion
1 carrot
1 stick celery
parsley
garlic
1-2 cans tomatoes
tomato puree paste
red wine
1. Soak mushrooms for at least 11/2 hours in warm water. Squeeze out mushrooms and chop. Reserve the soaking water.
2. Finely chop the onion, carrot and celery with the parsley and garlic. Gently fry in olive oil until onions soften. Add mushrooms and fry for one minute.
3. Increase flame and add 1/2 glass red wine. When evaporated add the cans of tomatoes (chopped). Cook over a low heat for 1 & 1/2 - 2 & 1/2 hours.
4. Halfway through cooking, add the strained mushroom water. Serve with
tagliatelle.
Sorry for vague measurements, but it does work and is a delicious flavour.0 -
One tip - mushrooms can sometimes contain grit so I always rinse the soaked mushrooms. I also strain the soaking liguid through muslin or kitchen towel and add that to whatever I am cooking.NSD 0/150

Soak porcini as above, saving the liquid
Sautee a couple of chopped cloves of garlic and a couple of slices of bacon, chopped (or cubed bacon - cubetti di pancetta) in a mix 1/2 butter and 1/2 olive oil
Chop soaked mushrooms and add to frying ingredients, together with the liquid, salt & pepper to taste
When all ingredients are soft and cooked, lower the fire to minimum and add a small carton of single cream, warm briefly and take off fire. For a final touch add a handful of fresh chopped parsley.
Add to cooked pasta and sprinkle with parmesan cheese.

Its long pasta called tagletalle in a mushroom and bacon sauce and I think with cream. I had it round a friends house and im after making my own for tonight. Can anyone please help me with a recipe?

This is my husbands recipe and it's fab :cool:
3 egg yolks
284 ml pot of single cream
black pepper to season
3 tbsp parmesan cheese
4 rashers bacon, chopped into pieces
few mushrooms
packet of fresh pasta in shapes of your choice!
Boil the pasta.
In another pan, fry the bacon and mushrooms.
Beat together the egg yolks, cream, pepper and parmesan.
Drain the pasta and mix it in with the bacon and mushroom.
Pour the egg mixture over and cook for 3-4 minutes while stiring, until the egg sets.
That's enough for 4, so adjust accordingly!Here I go again on my own....0 -

meanwhile chop some bacon and mushrooms and fry them gently add a can of campbells condensed mushroom soup, thin the 'sauce' with a little milk (can't bring myself to mention cream on here) once pasta is cooked top with sauce
great supper dish - not as nice as REAL carbonara of course but passable0 -
Oh - i used to do a campbells mushroom recipe - basically you mix tuna with mushroom cambells and serve over rice.
Long way mix in a casserol dish (can add extra chopped veg-red peppers changes the colour!) and bake till goldern brown. Quick way mix in a saucepan and heat!
