My top tip when it comes to making any tomato based pasta sauce is....cook the ingrediants first in the pan then add the tomatoes later after the flavours have all been released from cooking. Took me years to work this out but makes a huge difference adding the tomatoes afterwards as oppose to at the same time......0

This is a favourite of my daughter and I:
Put a large pan of salted water on to boil. Chop a red onion and put into the pan, then 250g broccoli with the stalks finely chopped. Simmer for about 10 minutes and then add 400g penne or macaroni. Simmer for another 10 minutes until the pasta is cooked how you like it. Reserve 400ml of the water and drain the rest. Put the pasta and broccoli into a serving dish and keep warm.
Put the reserved stock back into the saucepan and dissolve 1 vegetable stock cube. Whisk in 1tsp french or german mustard and a 200g pot half fat creme fraiche, season and add a sprinkle of thyme. Stir in 150g grated mature cheddar until melted. Pour this over the pasta and it is ready to eat! Yum!
This is a different one can't wait to try it.

Kids favourite:
One chopped onion - gently softened with tiny amount of oil in pan
Bit of garlic if you fancy it
Carton of passata
Lots of basil
Healthy dose of Paprika
Sweetcorn if you have it
Can also fry chopped bacon with the onion if you like or chopped smoked pork sausage.

am no delia but was thinking of doing a pasta dish for family at weekend as a sort of treat (i never cook dinner) has to be something easy as disabled so find chopping and standing bit of a problem. so idea was to boil some pasta put in large bowl and then cover with a chicken based sause. have soe of those ready cooked chicken breast strips in freezer so was going to add them to sauce at last minut to warm through and then pour whole lot over pasta and serve with a side salad and some garlic bread. was originally going to cheat and throw in jar of sauce but am sure a home made one will be alot tastier and not too hard to make. not sure yet whether its to be a cream based or tomato based sauce but would love some of your tried and tested recipes to look through and choose from before the big day, also what is best shaped pasta for dish like this. dont eat the stuff myself but can see how with tubes sauce would sit inside as well as on top where as bows or twists would just have sauce on top, which is best??? and thanks in advance0

Tomato-based sauces work well for any shape of short pastas, whether bows, penne, spirals etc. Cheap, too. Cut upi 1 onion and 1 clove garlic, then saute on a little oil, add some peppers and mushrooms, cook a few more minutes, then add a can or 2 of chopped tomatoes; turn down the heat and let simmer for 20 minutes, You can add dried herbs to it, like basil, oregano, and thyme if you've got them. A little tabasco sauce or dried chilis if you like it spicy. Once the pasta is almost cooked - start the water boiling once the sauce is simmering - add in the chicken you've got to the tomato sauce and let it heat up. Then drain the pasta, add to the sauce and serve.0

Hi, I absolutly love pasta and have a few recipes I use regular which I know my whole family will eat plus are very quick and easy to make and very tasty
1st one is Carbonara. Fry off some strips of bacon until crispy lower heat add carton of single cream to pan when warmed through add a handful of parmesan cheese and plenty of black pepper stir until cheese is melted and sauce heated through add to any cooked pasta. You could vary this by leaving out bacon and adding some mozzerella and cheddar plus your chicken.
2nd is a creamy tomato based sauce. Dice and fry onions, garlic, peppers or whatever veg you have in cupboard ( I also use courgette & spinach ) I then add a tin or two of chopped toms dried herbs and a splash of worcester sauce and tomato puree,cook for about 10 mins then add a splash of cream plus either cooked chicken, bacon, sausages or even tinned tuna add to pasta and top with cheese. yummy am actually doing this for tea tonight lol
Also I might add I have arthritis in both wrists and I find these ok to do not too much chopping, Hope this helps0 -
Forgot to add I usually like to use pasta shells for chunkier sauces as it holds the sauce much better x x0

I can cook properly and do make things from scratch but I do also have one cheats pasta sauce, which I use onions, mushrooms, peppers and whatever meat I fancy (ham, chicken or whatever), soften off your veg as you would normally (and meat if using raw chicken etc), add a tin of.half a tine of .... i can hardly bear to say it... tomato soup
and heat through. Throw in your cooked meat and heat through again. Plenty black pepper and some herbs, throw some cheese in and you're done! Makes something similar to the creamy tomato sauces you can buy.
The other ones I make tend to use the same holy trinity of veg (what my OH calls it) in chopped tomatoes or passata. Add either
1. 3 sausage pasta - hot dog or pork sausages, garlic sausage or chorizo, pepperoni - a mix of these 3
2. ham and mushroom - needs no further explanation
3. arabiata my-stylee - ham, veg and red chilis
3. what OH calls my rich pasta -ham and smoked paprika - gives it a rich flavour that he loves,
Beyond that, we make the usual spag bol, chicken in tomato sauce ones, carbonara.
Needless to say, we love pasta!
