    I am making dinner and need onion... i have found (!) 2 onions in the fridge (not peeled or chopped etc just as they come).... god knows how long thye have been there. They feel slightly softer than usual when u buy them but not squidgy iykwim!! Will they be okay to use??? Or should i chuck them? I am TERRIBLE with chucking things before i need to - i am a bit ocd about things not "going off" etc!! Please help!! :o
    Baldrick, does it have to be this way? Our valued friendship ending with me cutting you up into strips and telling the prince that you walked over a very sharp cattle grid in an extremely heavy hat?

    Peel them down till you get to the hard bit, then use that:rotfl::rotfl:

    You will know if they are ok when you slice them in half. If the outer layers are a wee bit squidgy, just peel them and discard them. The other parts will be fine!

    I'm sure as soon as you cut into them you'll know if they're ok

    a bit softer than usual is fine, mouldy & slimy isn't, but you'd have noticed already if they were that far gone ;)

    Have just posted on grocery board asking if I can
    freeze tomato paste?- maybe i have posted on the wrong
    one. Anyway I want to try making our own when I get the paste.

    Here's a really nice recipe, well my lot love it any way! and it freezes well too.

    2 medium onions
    2 cloves garlic
    1 tsp mixed herbs
    4 level tsp sugar
    40g/1.5 oz butter
    olive oil
    1 pint beef stock
    2 bay leaves
    300 g/ 6 oz tomato puree
    salt and pepper

    chop onoins finely and fry in the oil and butter until pale gold.
    add all the other ingredients and bring to the boil slowly, cover and simmer until onions are softened.

    If you want to make spag bol/lasangna add 500 g of minced beef when you have fried the onions, fry until browned and cover and simmer for around 50 minutes.

    You don't have to make a pasta sauce using tomato paste/puree if you don't have some to hand. You can use fresh, chopped tomatoes, some canned whole or chopped ones or shop-bought passata. The fresh tomatoes will probably need to be reduced on a low heat to thicken up nicely. For me, experimenting is half the fun of home-cooking.

    You also might find a scant quarter-teaspoon of dried chilli can add some interest to Littlemix's recipe if you want to ring the changes. Also, never forget that basil either fresh or dried is the ideal partner for tomatoes, so ensure your dried herbs mixture includes some if you can.

    My pasta sauce recipe is very similar to Littleminxs,

    1 onion finely diced
    2 garlic cloves - crushed
    a couple of teaspoons of oil to fry off onion and garlic
    2 cups of beef stock
    1 carrot finely grated
    1 750ml jar passata
    either fresh or dried herbs - what ever i have on hand, basil, rosemary, oregano etc
    a good grinding of pepper
    and a couple of pinches of salt
    I usually add 500g of beef mince for bolognaise to this or you can half your mince and add a tin of kidney beans to make nachos or tacos
    And like Bitter and Twisted mentioned a little bit of chilli is nice too
    Freezes well too :)
