  • We often do a packet mix of couscous (Ainsley Harriott or better still cheap ones from Aldi) and add tomatoes, celery, cucumber etc cold on top. Does 2 lunch boxes and is healthy, low fat etc.

Make your own tortilla wraps with either soft cream cheese and fillings, or three bean salad - delicious and much cheaper than buying them.

Make interesting salads, lovely with sundried tomatoes in oil (Aldi) or pineapple (tinned or fresh) on top. Top with any nice blue cheese and you have a delicious salad your co-workers will be trying to pinch from you.

My new years resolution is not to take my lunch with me every day too. One big weakness is Somerfield's sundried tomato and basil rolls fresh from the bakery. Decided I can have one per month, but only if I take my own sarnie filling - only 28p so hardly break the bank anyway.

Dbf and I have been making our lunches since we moved in together 8 months ago and we can do a week's worth of lunches for both of us for the same amount as it would cost us to buy our lunch on just one day per week!

Wraps with either soft cheese or mayo and some salad are easy and lovely, although wraps can get pricey compared to bread.

Cous cous is a saviour - most supermarkets do bags of the stuff (about 60p) that you just soak for 5 mins in a bowl. I add some spices while it's soaking to give it a bit more flavour. You can then add whatever you like - beetroot is good (plus it goes a funky colour!). My favourite is spicy roasted vegetables; they take a while to do but if you've got the oven on anyway, it's easy enough - plus it's a good way to use up veg that's slightly past its best and you can do a batch that will last a few days. Yum, I'm getting peckish now :rotfl:

To save money, I just take cheese or ham sandwiches with a biscuit and some fruit, but I need some variety and spice in my life! :)

Can anyone suggest any good packed lunches to take to work?

    Hi,

How about tortilla wraps (better for you than bread apparently!) - my favourite is chicken and avocado. Soups and a roll are good and you can use a flask if you don't have access to a microwave. If you can heat things up how about taking in leftovers from the night before?

Or a nice fruit salad and a pot of yoghurt. You say you take in fruit, but something that is chopped up and served with yoghurt is so much more appealing somehow than just an apple and a banana.

And i always sneak in a treat, even if it's just a very miniature hero.
