I have a lovely recipe for Pear & Lemon Jam - much nicer than it actually sounds and it turns a lovely pink colour as it reaches setting point:
2 kilos pears - peeled, cored & chopped
3 medium lemons - use the strained juice and zest
1 kilo sugar
1 litre of water
Add water, chopped pears, lemon zest & juice to a large heavy bottomed pan.
Simmer gently till pears are soft.
Add sugar, stirring well till dissolved.
Bring to a rolling boil and boil hard for 10 mins before testing for a set. Checking then every 4 mins thereafter till setting point is reached.

You could stew up a load of whole, peeled pears (really lovely done in red wine with sugar and spices) then freeze excess. Lovely warm pud in winter with a bit of custard or cream, or have them as a luxury breakfast with greek yoghurt.
If you stew chopped pears 'plain' in sugar and water, they can be the basis of a crumble or sponge pud later on.Trust me - I'm NOT a doctor!0 -

Ooh I love Spiced Pickled Pears! It sounds a bit weird but they're lovely with cold meat - especially chicken and turkey. There's a similar recipe to the one I use here - http://www.bbcgoodfood.com/recipes/1302/pickled-pears.0

thank you all for your ideas so far have made a pear and almond tart and a pear and chocolate sponge. Am going to take them into work tomorrow to raise some money for charity. Am sure there will be more pears coming my way though so sure will try some of the other ideas.0
