    How fresh are they? eggs will last longer than you think if they were laid today or yesterday. If from different days use he right eggs for the right jobs....freshest for mousses.poached/fried and oldest for meringues. Soufflees for a family will use a fair few eggs in a big go (we eat a lOT of soufflee here when all the girls are laying. Cakes will freeze, meringues will store well.....airtight they'll store till the fresh season strawberries are ready for Eton mess. :)

    ....as time goes on check them in a jug of water ...fresh sink ont their sides, the ok but not for poached eggs sink but on their bottoms....so seem to stand up, past it float.

    eggs eggs and more eggs has HEAPS of suggestions! Also - dates on eggs , how long do they keep for?

    I rely solely on the float test and used eggs the other day which had been in my cupboard for about 7 weeks and they were perfectly fine - as they sunk to the bottom of the bowl of water

    Lots of traditional desserts use up tons of eggs or yolks: custards, custard pies, creme caramel and creme brûl!e and so on. Mayonnaise and hollandaise are tricky to make but make simple meals very luxurious (= calorific) and of course both go very well with... more eggs.

    Or just have them for breakfast. As they age they get less good to poach but better for putting in pancake batter.

    Wow! That's a lot of eggs - what a lovely gift :)

    lemon curd was the only other thing not already mentioned that sprung to mind :)

  • You could use the egg yolks for lemon curd and cookies and you could use the whites for meringue. Ooh then you could have lemon meringue pie with the lemon curd!

    Once you manage to clear a bit of room in the freezer you could make quiches and freeze those. Or make brownies (need 4 eggs in the recipe I use) or beetroot and chocolate cake which also uses 4 eggs at a time.

    Eggs do keep for ages though. Enjoy! x

    You can freeze eggs to make cakes with later on - they take up a lot less space in the freezer than a cake. Break three into a little plastic tub, splash of milk and beat lightly. Once defrosted use for a 6oz mix cake. I did this last year stockpiling eggs in the freezer for when the girls stop laying.

    Spanish omelette gets made a lot here when we have piles to use.

    ok they were all laid yesterday and this morning starting to think my dad has gone chicken mad last i knew he had 4 but theres no way 4 hens can lay 42 eggs in 24 hours lol.

    I think I am definitely going to have a go at lemon curd just need to find a recipe do you have to sterilise the jars like you do with jam??

    omelettes are going to be a given as we use 10 eggs at once here.

    might also make a queen of puddings anyone know if this will work well with lemon curd:rotfl:

    oh and the beetroot and choclate cake does it have to be fresh beetroot or can i use cooked as have loads in the freezer already cooked though :o
