I have the oven on now, and it'll be on until 10.30pm doing a roast.
I've just realised that I have half a dozen eggs with todays use by on so the sensible thing to do would be to get a cake in, or some biscuits or something...
What uses a lot of eggs and can be baked by the not-so-talented? (So not a souffle then!)

By the way - i never pay attention to the dates. Put them in a pot of cold water. If they float to the top, they have air in them and are off. If they stay put on the bottom, fresh enough to use so don't necessarily panic!
Can you make some sort of fritatta? Spanish omelette? (both good cold for tomorrows lunch) Custard? Scrambled eggs for brekkie tomorrow? Pancakes? Doesn't have to be cake
You could use 3 on a good size double victoria sponge? (as in put in two separate baking trays)

Do the float test and I'm pretty sure you'll find that you don't need to use the eggs right now.
Eggs can usually be used quite a bit after the use by date. Get a jug of cold water and put the eggs in one at a time. A usable egg will sink or stand vertical on the bottom. An egg that floats should be binned - although you could break it into a dish and see if it smells OK. The reason the test works is that each egg has an air pocket in it that grows bigger as the egg gets older - so a fresh egg sinks and an old one floats.
This is not just an old wives tale - I'm sure others will say the same on here. But if you still want to use the eggs the easiest thing to do would be a frittata or crustless quiche that would keep for a few days in the fridge for lunches.

I did it the other day. I didn't think the eggs i bought were dated - on saturday i checked by the float test and they were perfect and gobbled up by me. The date was 27th july!
I fully trust it! But that's just me

Agree to all of the above! I'm sure your eggs have probably another few weeks to go, it really takes ages for an egg to go bad, especially if you keep them in the fridge - do you remember when you last experienced a bad egg?

Thank you Zippy, I wouldn't normally worry about dates, but being 7 months pregnant and a generally poorly bunny at the minute I've decided now is a good time to come over all temporarily cautious. I did the fresh test before posting, they all passed.
Bread & Butter pudding was on the thread you linked me- will do that. That ought to use 4, plus some bread I don't like, plus some milk.

This weeks conundrum is an egg starter but has to be quick as doing lemon meringue all i can think of is egg mayo in a tomatoe
