Pad Thai has eggs put in at the end- wonderful. Fried rice. The usual cakes, quiches, creme brulee. Make some custard and freeze in individual portions. Ice cream. Brioche uses loads of eggs! Greek egg and lemon sauce. Meringues. How about a pavlova filled with creme patisserie?

Frittata (see Nigel Slater recipe, but you can put anything in it). Just had one which included courgettes, tomatoes and an onion from the garden, half of an Aldi Chorizo and some Aldi parmesan - used 8 eggs, enough for OH and I for supper, plenty for lunches tomorrow as it is nice cold as well.
Other than that, sponge flan cases are good, and freeze well - it means that you always have the basis of a dessert, just add some fresh or canned fruit and cream x0 -
You can preserve them with isinglass - google it, but I have to say that it bothers me, and I haven't done it in years.
If you like pickled eggs, great idea!
Think about bartering - so many people love proper free range eggs.
Meringues are always useful to have by - small meringues or made up like a pavlova. You can freeze autumn raspberries as well and then you have the makings of a posh pudding.
I find that the yolks freeze OK, whites less so.0 -
cakes & quiche then freeze them - that way you have cake & quiche in the winter when they're not laying as much

We have lots of main course soufllees. Very easy, despite their bad rep, an excellent way to stretch other ingredients and feels very elegant while being very frugal.
Oeufs en cocotte are delicious too, and such an easy peasy lunch or supper with salad.0 -

My husband has come home from work today with 6 doz eggs! (He is a delivery driver)
They are dated today, and apart from a massive omelette and giving some away, does anyone have any suggestions as to what to do with them all?0 -
What about boiling them and making egg and onion for sandwiches or a quiche of some description, you could make a few and freeze them?0

Could you just crack them open, stick them in a tupperware box and freeze them?
