    If you are making potato wedges, make some wells in the tray 5 minutes before the end and crack an egg into each. Cheap and easy meal (but not very 5-a-day).

    Tenth Anniversary Combo Breaker
    We're looking after hens for a friend so have the same predicament. Tonight we're having gammon egg and wedges. I will also have egg and bacon rolls at the weekend but they can be used in sponge cakes, yorkshire puddings or mayonaise. Yum yum. xxx

    mayonnaise, home made custard, chocolate mousse all use up lots of eggs

    I like a big frittata. Potatoes, peas, peppers, bit of chorizo maybe. Eggs, cream and a little cheese whipped up, and cook either like a big omelette or a crust less quiche in the oven. I do mine in silicone bakeware, much easier to turn out...
    Lovely hot from the oven, or cold with salad...

    Some great ideas thanks everyone.
    You can't beat a big plate of bubble and squeak with an egg on top.
    I remember the fried spuds with egg in too, but nothing tastes like mum used to make.
    I feel hungry now, I can't remember the last time I had a boiled/poached egg and soldiers.

    If you really can't use them all up, then pickling them is a great way of preserving them for later.

    If you fancy something a bit different with egg, this one springs to mind ...

    BAKED POTATO & EGG

    A posher and healthier version of egg and chips. Unfortunately, it isn’t as quick,

    Serves 1

    INGREDIENTS

    1 large potato
    1 egg
    1 teaspoon of butter
    1 tablespoon of milk

    METHOD

    Wash the potato, then remove any “eyes” and nasty bits. Wrap the potato in aluminium foil.

    Cook in the top of a preheated oven at 230°C, 450°F, gas mark 8 for 1 hour.

    If you like your potato crisp on the outside, remove the foil after 30 minutes.

    It is ready when it gives when pressed.

    Wait a few minutes for the potato to cool down a bit. In the meantime, break the egg into a bowl and pick out any bits of shell.

    Make an egg-sized circular cut in the top of the potato. Use a teaspoon to dig an egg-sized hole down to the middle of the potato. Put the butter in the bottom of the hole.Put the.egg and milk in the hole.

    Put the potato back into the oven for another 10 minutes until the egg is cooked.

    ADDITIONS & ALTERNATIVES

    Use single cream instead of the milk.

    Add 1 tablespoon of grated cheese.

    TIPS

    Sticking a metal skewer through a baked potato helps it to cook in the middle.
