I seem to have a load too.
Not sure how to use them all up myself at the mo. I may make a quiche or two for the freezer, maybe a some baking (not sure what yet) and lots of eggs for breakfast/lunch for a few days. Also I will persuading himself that we will not be pickling them, as he barely finished the

I would do a frittata, great for a light lunch or supper and leftovers keep well for a packed lunch the next day.
If you have freezer space and the time do ice cream, I've tried a few of Nigella's recipes they were great, then either freeze the whites or batch cook some meringues and freeze to use when you need/want them.Jan - June Grocery spends = £531.61

Hi
I have a load of eggs I need to use up in next day or so and ok, we are having omelettes for dinner tonight and I can do some boiled eggs for lunch tomorrow but that's probably reaching our egg tolerance level for now
What can I do with the rest (about 10 eggs)? I can't bake as I have no oven, just grill, microwave and hob. Can I freeze them raw and how? Can I make scrambled eggs/omelette and freeze without it turning into tire rubber when I heat it up? Any other recipes/ideas that will freeze?
I've got plenty of potatoes too if there is something to combine the two - I've never tried freezing those either. If using fresh I might make jacket potatoes where I scoop out the centre when cooked and mix up with egg and herbs and cheese then rebake - could I freeze those and should it be before or after the rebake. Also make a sort of layered potato/onion/egg/cheese/milk pie sometimes, again could I freeze and before or after cooking? (Do these by a mix of microwave and grill).Cash not ash from January 2nd 2011: £2565.:j

Are you thinking they need using up because of the use by date? I have eggs long after the date on them, drop them into a jug of water, as long as they don't float they are fine to cook and eat0
