Morning all
Hoping one of you Old Stylees can advise.
I have just realised I have 11 eggs with a use by date of Wednesday! I did have 14, but I've just made a cake.
We don't eat eggs as eggs IYSWIM other than occasionally I take two hard boiled to work with salad, or if Mr P is not here at lunchtime, I'll have scrambled egg, which he can't stand.
So, I have 11 eggs to use by Wednesday. I can take 2 to work tomorrow, which will be 9, but what can I do with the rest? Lots of time today, but they need to go into something that will keep or can be frozen.
Any suggestions?

Eggs don't go off on their use-by date. I regularly use eggs that are a month out of date. To test them place in a jug of water, if they float throw them away, if not then they're fine to use. A Nice big Quiche would use up 3-4 eggs and you can cut it up into portions and freeze for later. Could be used for lunches or dinner.

"To freeze whole eggs, break them into a bowl and beat a little to blend. Tip into a freezer bag or airtight plastic container and use within three months - freeze them in small batches, as these will be most useful, and be sure to label the number of eggs that go into each freezer bag. Whites and yolks can also be frozen separately. Egg whites just need tipping into freezer bags, whereas egg yolks need a pinch of salt or sugar beaten in (depending on whether they'll be used for sweet or savoury dishes later). This will stop them from thickening too much upon freezing. Defrost frozen eggs in the fridge overnight and use them straightaway."0 -

I always ignore the dates and use the float test in this thread .
Put them in water and if they float they have air inside and have gone off. If they stay sunk they are fine - always works for me anyway

you can make and freeze sponges for trifles and tiramisu....I've done this before. Or make extra eggy scones - use 2 eggs instead of the normal one and use less milk. Yum0

I would really like your help and suggestions. OH came back from the cash & carry yesterday with 5 dozen large eggs because they'd been reduced to £2.49. :eek: There's no way we'd eat them all so I'd like to use them to make things I can stick in the freezer but other than some cakes and quiches I'm stumped.
Has anyone got any ideas of things I can freeze so I can use up these 60 eggs?Dum Spiro Spero0 -

Ice cream would use up a few yolks, freeze the whites to make meringues as and when you need/want them.Jan - June Grocery spends = £531.61
