    I'm sure they'll be fine for a couple of days. I've used eggs over a week past their use-by date. I always keep mine in the fridge though.

    I'd probably go with a fritatta too, and make pancakes.

    I always say this but...souflee....cheap and easy for supper with store cupboard ingredients.

    What about Impossible Quiche.

    My sister, who lives in New Zealand, gave me the recipe. I didn't cook it for ages as it just looked so uninspiring and I don't particularly like quiche - then another of my sisters served it for lunch - OMG! It was so delicious :j.

    It is now a regular on our menu as it is so good for using up all those odds and sods in the fridge and can be served hot or cold. An added bonus is that it can make four eggs magically stretch to serve 4 greedy adults a good sized portion each :D.

    Try it - you won't be disappointed :cool::D:D

    Impossible Quiche
    1½ cups grated cheese
    ½ cup SR flour
    1 onion, finely chopped
    1½ cups milk
    4 eggs
    Salt & pepper
    Optional extras:- 3 rashers bacon (chopped); mushrooms; spinach; garlic; parsley.

    Mix together all the ingredients - but DO NOT BEAT.
    Pour into a greased dish (I use my Pyrex casserole)
    Bake at Gas 4, 180° C until set and a knife comes out clean - approx 45 mins to 1 hour - depends on depth of dish.

  • Eggs are generally ok for a few days but when I get a glut from the farm I tend to hard boil and pickle them.
  • I eat mine up to a month out of date... never had a bad one yet though!

    PS. I was told by a farmer that you should never keep eggs in the fridge... the egg companies tell you to do so because it gives the eggs a shorter life (!)

    I keep mine in a ceramic hen... and do the float test if they are more then a few weeks over their dates!

    I suspect that you have some leeway here. Must admit that I keep mine in the fridge and totally ignore dates.

    If I've had any skulking away in the back un-noticed I check them against the pictures on this great site for seeing egg freshness:-

    If you don't have any particular plans for them why not just freeze the eggs themselves? If I buy whoopsied eggs I freeze them to use later, that way you don't have to commit to what you'll use them in and they don't take up much freezer space.

    All you do is crack and beat them (I do this in three-egg batches as that's a handy amount for me) then freeze. Defrost in the fridge then use as normal in recipes or to scramble. If you often use egg wash you could do this in ice-cube trays to save on wastage.

    There is a suggestion that you don't keep eggs in the door of a fridge because that tends to be the warmest area.

    I found this in a quick search...
    The Food Standards Agency (UK) recommends eggs are kept in a cool, dry place. Ideally, they suggest in a fridge but do not say it is compulsory. I have never seen them in the chiller at supermarkets, suggesting it is up to you.
