  • I have a few eggs I need to use as well, I will be making egg fried rice for dinner. There are plenty of recipes online, mine will be with chicken and a few vegetables :)

  • make a fish pie with h/b eggs in
    sausage and egg pie (pastry, sausagemeat & onion, with halved h/b eggs in the middle, topped with more sausagemeat and either pastry top or mashed potato topping)
    chocolate mousse
    lemon meringue pie
    eggs benedict
    kedgeree
    or baked, boiled, coddled, scrambled, poached


    am hungry now :p and wanting an egg custard!

    quiche, egg custards, bakewell tart, cakes, pancakes to freeze.
    meringue with a filling to use the yolks?
    do you like omlettes with a lot of other fillings? or souffle omelettes?

  • I also read about freezing the eggs once separated, just note on each box how many there are. And then once defrosted, you can whisk them back together again (or separately if the recipes call for it), and cook as normal...

    Or you can have massive baking sessions, as already mentioned, cakes and quiches and the likes also freeze well once cooked...
    Having fun trying to save money without going over the top and living on budget food all the time...

    I also like to do stuffed potato skins with egg - cook a jacket potato in the microwave until nearly done, cut in half, scoop out a spoonful of potato from the middle of each side. Mix in a bowl with beaten egg, herbs, leftover veggies/bacon/whathaveyou, pile back on the potato halves, sprinkle of cheese on , into oven until crispy and golden on top. The egg makes the filling puff up and you've got a sort of cross between a stuffed pot skin and a spanish omelette, very tasty!

    ok my dad has just been over with a lovely gift of 42 fresh eggs, now how long will they last and what can i do with this many, also I don't have any freezer space at the moment so can freeze anything.:eek:

    They will keep for a couple of weeks. What about Quiche, sponge cake, egg mayo sarnies, frittata, fairy cakes?

    It depends on how fresh they are right now. There is a sink/float test to see how fresh an egg is. I'm sure google will bring up something.
    I would be looking at egg based meals - ommlettes, tortillas, egg curry, cakes etc. I'm sure we could get through them in a week!
