Eggs eggs and more eggs!

i have 24 eggs in the fridge......use by 25th january!!!!!
what can i do with them all? i really dont want to waste them.
i will give dd1 and myself 2 dippy eggs and soldiers each for lunch and tea was planned to be an omlette anyway but that will only use 8-10 of them,what about the other 14????????

    I wouldn't worry about the date stamped on them as you can easily test whether or not they're fresh by putting them in water and see if they sink or float. I've eaten eggs a month past the date on them and they've been perfectly fine :)

    In fact I've just checked the date on the eggs in my fridge and it's Dec 21st, and we made egg mayo for lunch yesterday and it was absolutely fine! After all, chickens don't lay eggs with dates already stamped on them when we keep them in our gardens ;)

    You could make sponge using the 6, 6, 6 and 3 rule (6oz flour, sugar and butterm with three eggs)

    That would get rid a of a few more

  • You could make a pound cake (turns out very much like a lovley madeira, or oeuffs a la neige (a gorgeous custardy thing with floating meringue islands).
    You could have a mammoth baking session and freeze some of it, I have used eggs past their sell by date and I'm still here, but I would recommend checking them first!

    If you beat the eggs, you can freeze them.

  • Hard boil or scramble for egg mayo sarnie filling, which will keep in the fridge for a few days.

    I would make pavlova with the whites, but eggs always last longer than the use by says, especially if you've refrigerated them.

    I may be a bit thick but if they float - does that mean they are OK or manky ?
