    I've gone mad buying eggs recently because our corner shop had BOGOF on large eggs 85p for 12! So I've baked cookies, muffins, made egg mayo sarnies, californian potato salad, corned beef hash with fried eggs, eeg & chips, scrambled eggs on toast, and I'm freezing them too!
    My Doctor told me that "1 out of 3 people who start smoking will eventually die." The other two apparently became immortal.

    Have an egg day, overdose...... i have 5 eggs for breakfast (scrammbled), then the rest just break down over the day, put into a glass and drink them raw...

    But really i think you can keep them a couple of days longer......... :D
    If you think nobody cares about you, try missing a couple of payments.

    Don't panic angchris, the eggs will be fine for a while after the date. If you want to use them up, why don't you make a few quiches and freeze them? You can make different quiches, and with good weather coming (hopefully) they will be great with salads. You can make mini quiches - they also freeze brilliantly.

    Someone said pickle them - that is a good idea, I have never done this but it could be a nice change.

    Make a few cakes to freeze, dropped scones which freeze well also. The eggs will be fine for another week anyway so don't worry.

    As an egg ages air builds up inside the egg. I don't know how this happens, but I remember having to look at eggs from new to 10 years old. Yes my tutor had been teaching for a while...... If you hold an older egg up to the light you'll see a gap at one end. You can also see it with older eggs when you hard boil them as they may have a flat bottom!!

    I use eggs after the use by date but you can't beat fresh eggs in scrambled eggs, boled eggs and ommlettes.

    MY DH is just making breakfast mines 2 large free range eggs and wholemeal bread mmmmmmmmmmm!

    Extremely hard boil them and go egg rolling!!!

    May do the same myself, tomorrow. Currently got a batch boiling with some red food colouring in, so they come out with dark red shells. The next batch are going to be done with onion skins so they come out with orange shells.

    we oftern use eggs after dates as said before put them in a jug of water if they sink to the bottom they are still fine to use

    We have chickens, so we don't get use by dates on our eggs! The tip about putting them in water is good - don't eat the floaters!!!
    Also, just crack them into a glass before you use them in your cooking - you'll soon know if they're off - they totally stink!!! :-(
    They last about a month before they go funny, so you've got plenty of time to enjoy boiled eggs and soldiers, omelette, scrambled (with cheese or herbs is great for brekkie, really fills you up and keeps you not hungry for ages), souffle, pavlova.. the list is endless.
    But seriously, you're not going to get ill if you eat them past their use by dates. Just check they're ok when you open them, you really will know if they're not!
    Use by/sell by dates are always very very early, so the suppliers get lots of lee way time, and they persuade nervous people to chuck away perfectly good food!!
