    Fresh eggs are just so lovely. Why not use some of the spares as gift / thank you present for friends.

    Mixed eggs with a little milk and pour over cooked veg and tinned/boiled potatoes. Bake in the oven until brown and cut into wedges. Serve hot or cold for packed lunches.

    People near us sell them on their doorstep. You don't need loads of spare eggs to make this viable - the ones near us normally have a dozen or so in a box by their front door, and let people help themselves and pay through the letterbox.

    50p/half dozen for free range eggs - lovely! ;)

    My DS loves eggy bread - that's always good for using up a few eggs.
    And if you're not keen on plain omelets, what about souffle omelets? I like them with cheese on & grilled. (Just whisk the eggs with seasoning etc till quite frothy, cook the bottom on the hob, then put under the grill to set the top - you can add cheese, tomatoes etc then)
    And spanish omelet is good, too

    I don't much like ordinary omelets, by the way. Can you tell?

    This dish is like tofu in consistency, or a savoury set egg custard if you like. You can add your own ingredients as you would do an omelette. Serve it over rice for a quick supper. See http://lilyng2000.blogspot.com/2005/10/steam-eggs.html

    Umm let me see.....Egg sandwiches (hardboiled with salt, pepper and mayo)

    Spanish Omelette. Cooked diced potatoes, fried onions, herbs (thyme) as basic, but add cooked peppers, leftover cooked greens bits of bacon, sausage etc. Secret is heat all the bits through in the pan, THEN tip it into eggs which are beaten in a big bowl, and mix it in, wipe out the pan and add a little more oil and tip egg mixture back. You can cook it partly on the hob then finish top under grill or I make mine in a pan which can go in the AGA two minuites on the top to set the botton, then just whack it into a hot oven for about 20/25 mins, until it is set in the middle. It's like quiche with no pastry! Also great cold. When I make mine for the 5 of us I use 12 - 15 eggs.

    Egg strips for garnishing stir fries. Beat one egg at a time to make little thin omelettes, roll and slice when cooked.

    Whisk gently with a little added milk and freeze, useful for the winter months when they are not laying so well

    Anne Marie - the link isn't working but I'd love to know how to make your macaroni cheese.

    I did make a quiche but the recipe I had used lots of cream so not so good for the diet, snap with pastry. But I love the idea of the spanish omelettes - I think I'll have a go at one tonight.

    The British Egg site is really good - including a slimming section with a yummy looking pizza - lunch for the weekend sorted out.

    And why didn't I think of hardboiling them for sandwhiches?

    Point 3: that looks really yummy!!! I think hubby may like this too :)

    Last night I used 2 eggs and the concoction was really nice. Courgettes, carrots, peppers, spring onions, peas and sweetcorn sauteed with no fat. Added a handful of rice, covered with stock and simmered until cooked. In the oven I cooked some barbeque bacon chops (special offer), and stirred the juices into the rice. Stacked it all together with a poached egg and chives on top. I was proud! ;)

    When all else fails, our family, colleagues and neighbours all have their fair share :D

    I've also heard of eggs mornay and haddock. Well I have some haddock defrosting but no idea how to make it. Is it easy, or fattening?
