    PP, do I just whisk to combine so it'd be like the liquid egg you get in cartons or does it need to be a bit frothy?

    I just whisk so that yolk and white are incorporated. Meant to say, you can then use this in cakes, too, if you label how many eggs there are. Never seen liquid egg in cartons? :confused: Is it widely available?

    i found best way was to put egg fluid into a measuring jug after its whisked
    divide total fl oz by number of eggs so you know how many fl.oz one egg is

    i then poured 4fl.oz ( thats two of my eggs ) into a ziploc and now i know each baggy is roughly two eggs so i can take them out in easy to use portions

    Egg in cartons is mainly a catering world thing, I think they brought it out in the shops a few years back but you have to hunt for it (and I say that from experience!!! :rotfl: )

    hi - i think the date stamped on the egg might be 3 weeks after they've been laid, not a scientific date after which they're not suitable to eat so don't worry - unless they are actually off you can carry on using them - they'll just be a bit flat and floppy so won't make the best fried eggs!

    no useful thoughts to add at this time of night (except that fresh eggs & cream & milk would make such delicious icecream ... SUCH delicious icecream) but lucky you!!! to have hens & fresh eggs every day!! I so envy you!! I'd love to keep chickens.....
