    I'm rubbish at omlettes

    But omelettes are one of the simplest things you can make, what goes wrong?

    I know they're meant to be but I just can't get the hang of them. They're fine until I try to get them out the pan as they all break up and I end up with a mess :rolleyes: I don't think it's the pan as I cook pancakes in there and never have a problem with sticking. I also don't wash it, just wipe it. I think its just me!

    Perhaps you should stick with scrambled eggs!

    You can make a slimming Carbonara, I did one last week as I'm doing slimming world and this is free on a green day:

    Easy Low fat Carbonara:

    1.Boil up your spaghetti
    2.Cut the fat off 6 rashers of bacon (this recipe serves 2 people), cut rashers into small pieces and fry in fry light.
    3.Beat 2 eggs together, add a few dried/ chopped herbs if you wish. Add a little very low fat fromage frais (about 2 tablespoons).
    4.Pour the egg mixture over the bacon in the frying pan, add the cooked spaghetti. When the egg starts to set you know it's done, just add to yuor dinner plates.

    Hope you like it.

    Ahhh I see. The only carbonara I've made is beating egg yolks with cream! :eek: I will definitely try that - I'dbe allowed that on Weight Watchers :)

  • how about making some lime, lemon or orange curd.

    Makes: 700 - 900g (1½ - 2lb)

    4 medium Oranges/Lemons/limes
    450g (1lb) Caster Sugar
    225g (8oz) Butter
    5 Eggs

    Thinly peel the rind and squeeze the juice from the fruit.
    Place the rind and juice into a double boiler (a bowl placed over a saucepan of boiling water).....

    great for tarts, pies, spread in sponges.
    not very good for diets but yummy could also be used to give as presents.

    Sorry about link, thought I had it working, so will give you recipe anyway.

    Macaroni (or small pasta shapes) simmer in boiling water as per packet instructions and drain.
    Grated cheddar cheese
    beaten eggs combined with
    milk
    butter
    salt, pepper
    mustard (I like grain but any type or omit) - up to 1 tsp.

    In greased casserole dish, layer of macaroni, top with grated cheese, another layer of macaroni, grated cheese (depending on depth of casserole, you might manage a 3rd layer.) Pour over beaten egg/milk mixture. Dot with couple of knobs of butter and bake in oven for about 30 mins or so at gas mark 6.
    Haven't given amounts as I just throw it all in, but for enough for 2 use approx 8oz cheese (you could use low fat cheddar, or reduce amount) and 2 eggs with milk made up to 1/2 pint. And also you could omit butter knobs on the top.

    For quiche in future you could use milk instead of cream, works out just fine - I only ever use cream in I have loads or for something special. You can also use plain yoghourt or fromage frais too in place of the cream.
  • Hi - I often use light philedelphia in place of cream. I also made a "light" carbonara last week and added some blanched english asparagus tips. Not authentic but was delicious.
