im still eating eggs every day and the eggs on the trays just arent going down

Impossible pie - on the bbc website - uses 5 eggs and is delish.
Pickled eggs are nice!
Pound cake uses a lot of eggs and keeps well.
Make some quiches and freeze them?
Meringues, that would use the whites and you could use them yolks in mayo or egg fried rice?0 -
The problem with keeping chickens, is they do insist on laying eggs!
Now we never used to eat many eggs, except for scrambled on toast as a weekend treat.
We've so far been either making cakes (not good for diet) or giving them away. But I feel we should really be utilising them.
So, what can we do with eggs? I'm rubbish at omlettes and would like to use them 'in' things rather than eating them poached/fried with everything. By that I mean use them as a main ingredient to save money (as they're free), but be a little more adventurous.
Plus we are trying to lose weight, so a yummy carbonara is out the question
I've looked in the index section but couldn't see many things.
Any ideas? So far I've got egg fried rice and toad in the hole.

We had thought of that but we only get 3 a day which isn't really enough for an egg stall. When we get our place in the country we will have loads more chooks and a table at the front gate.......New year, no debt! Debt free date - 02/01/07 :j :j :j0

you can freeze whites and you can freeze yolks. Great for the winter. Add 1/2 tsp salt or sugar to every 6 yolks0

What about making a quiche? Fill with anything you like and use 2-3 eggs plus some milk or yoghourt/fromage frais beaten together. You can freeze quite successfully, if you have room in your freezer.
Read somewhere on this board about pickling eggs, so if you like them, why not have a go at that. (Or for a pressie for someone who likes them).

My son would soooo love you. He loves omletts and would use the entire lot every day!
Not got any fresh ideas - but an extension on the quiche if you're trying to lose weight is a 'crustless quiche'. A friend used to make this by lining the dish with ham (I think). I'm sure I've the recipe on my pc so I'll have a look and post it if I find it.
