    sell them to friends and neighbours and make some money back
  • Make meringues and freeze. They taste perfect defrosted! If you don't have room in your freezer for big pavlova type meringues, you can always crush them up before you freeze them... That way you can take bits at a time for eton mess, to sprinkle on icecream etc.

    make some lemon curd with the yolks if you make some meringues.

    I like pickled eggs, which are quite easy to do.

    My husband and I have done a run of mystery shops recently all of which generate eggs. We are now in the position of having 9 dozen eggs sat in the kitchen with a maximum date of 2 weeks away even after handing some boxes out to bemused colleagues and friends. What would anyone recommend doing with them? I've thought about cakes or quiches, but they need quite a lot of other ingredients and would barely scratch the surface of our egg issue while costing a fortune in butter, cream, cheese etc. We have a big chest freezer so can freeze anything. Would really appreciate your help as I hate the idea of some of the eggs going in the bin.

    Omelettes will freeze well if you don`t make them too thick, seperate them with greaseproof paper before you stack them, or freeze a couple at a time in tupperware boxes.

    I`ve never frozen scrambled eggs but i don`t see why this wouldn`t work either.

    Frozen yorkshire puddings? That would use a fair few and you could fill your freezer with them.

    Go door knocking and hand out a few boxes to some grateful pensioners or put a sign at the bottom of your garden saying eggs for sale :D

    In the past I have worked at a shop where the Staff canteen cook boiled loads of eggs and then brought them out and thawed them as she needed them.
