Thanks for the suggestions, as you could prob tell all I could think of was omelette or boiled egg.
Can you please tell me more about the beaten egg over the potatoes? Would that be sliced or mashed potato etc

When I was a kid my mum used to do this thing she called a leek polanaise and I do it now. t's basically a pasta bake with cheese sauce with leeks (and sometimes mushrooms) topped with chopped hard boiled eggs, breadcrumbs and grated cheese.
We have a bit of a egg mountain here today too and I'm putting chunks of hard boiled eggs in the lasagne - apparently it's a southern Italy thing. After that it will be lots of cake as DS is 1 on Monday and on Sunday we are having a cake buffet at his party. (Lots of different cakes rather than the usual buffet fare!)0 -

Don't get too excited, it's just a leftovers-type meal for the skint. Fry some bacon cut into bits, add slices of cold, boiled potatoes and fry those until they are brown and crispy. Chuck a beaten egg or two over them and let it solidify. Not too much turning or meddling or it'll be scrambled egg with fried spuds. Not that there's anything wrong with scrambled egg with fried spuds, especially with some tomato ketchup on it.
Which reminds me, how about left-over mashed potato nests baked in the oven with an egg in the middle? And maybe some grated cheese on top for a bit of excitement?0 -

What about carbonara then use the whites for meringue as dessert.
Both quick & yummy.
Egg mayo sandwiches for lunches, I like to add spring onion tops to this.
A lovely supper is to make a cheese & onion sandwich, dip in beaten egg & fry until the cheese melts. Real comfort food but the calories aren't good
Gammon steak with poached egg ousing on top.

Egg white freezes well on its own and when defrosts whips up to a bigger volume than the fresh stuff (don't know why I assume its to do with water content?).
Cakes and muffins freeze well so I usually bake and fill the freezer when we have alot of eggs. You can make chocolate fondant batter and freeze it ready to bake in little metal tins (I save the ones puddings come in and reuse them a few times) which is all alot of restaurants do.
