You can make thick tortilla type omelettes and have them cold as part of tapas, you can make an omelette with pizza topping (finish it off under the grill), you can make thin omelettes with 1 egg and shred them to top salads like they do in the far east. Curried eggs, pickled eggs, omelette wraps where you put in the same filling as burritos etc. make yorkshire puddings for the freezer, baked egg custard as a dessert or like in the states for breakfast, make real custard so many yummy things. Lo' again I should have said before you can freeze raw eggs if you whisk them first, they aren't successful if you just crack the egg and freeze it. I would freeze some of the surplus in 2's in freezer bags, then you will have egg for baking, omelettes or scrambling when the hens go 'off lay' in the colder months. Cheers Lyn x.0
