    Lemon curd plus meringues = lemon meringue pie.

    Quiche would freeze.

    I love it when a friend turns up to an event that we run with a box of eggs as a present for us. It's a real treat.

    An older lady in the village puts a blackboard outside when her hens are laying well, and like you she sells at £1 for 6. I have to be quick and call in as soon as I see it though, no good thinking I'll call on the way back or the board has gone! I always keep my empty egg box in the car which helps as I know they're not easy to come by.

    I would love to sell to locals but we don't really get the foot traffic as live Ian rural road and most of our neighbours keep chickens.

    We did give 12 to our neighbour as an apology for them escaping into their garden. They weren't bothered at all but I hate the thought of my chickens trespassing ;-)

    Lemon curd is something I'll definitely look into as I can give it away as presents to loved ones etc. freezing the whites is also something I hadn't thought of!
    Cabot (0%) left to pay £2455 let the overpayments commence! :D

    Hi,

    Our chickens are laying lots of eggs. I do manage to 'give' some away. What can I do with the rest? What I make? What I freeze?

  • Cakes, loads of them. Specially Victoria sponge, with raspberry jam.

    I finish work early tomorrow, so all you have to do is put kettle on.

    Will freeze OK... some people separate yolks and whites, and mix with a pinch of salt or sugar for cakes later.

    Make a huge spanish omelette and eat it for lunch for several days.

    I'm just making a Sri Lankan Egg curry for dinner to tackle our egg mountain. Loads of recipes on line.

    Pad Thai has eggs put in at the end- wonderful. Fried rice. The usual cakes, quiches, creme brulee. Make some custard and freeze in individual portions. Ice cream. Brioche uses loads of eggs! Greek egg and lemon sauce. Meringues. How about a pavlova filled with creme patisserie?

    If you hard boil them they will keep for ages. Or you could pickle them.

    Pickle them! next month I shall start doing mine for Christmas - Son in law will be most disappointed if he doesn't get a couple of large jars of eggs! (er not for a Christmas present obviously! but to go in their goody cupboard).

    so simple to pickle eggs. Just hard boil them, cool them and peel them then pack in sterilised jars and cover with white vinegar - the cheap one not expensive stuff. you can use malt vinegar, but it makes the eggs go brown! then leave for about six weeks for the vinegar to penetrate right through the eggs.
