Shaksuka. Mine is loosely based on this recipe but I don't use the capers or caraway, I don't serve with bacon but I do make it with chorizo in it sometimes. I also quite often skip the parsley. It is one of our absolute favourite meals, filling, warm and tasty without being expensive or too rich.0

Apologies if there is already a thread covering this.. I have searched the receipe index.
Now that we are keeping hens we seem to constantly have more eggs then we need.
I have done the obvious things like bake cakes, eggs for brekkie but looking for some inspiration to help utalise in general cooking.

er - why not sell the surplus to neighbours? lots of people by me do this - some have signs on the gate when they have eggs to sell - I am lucky to have an uncle whose son actually farms free range chickens and a really fresh egg is a treat!0
