    We are the proud owners of 8 hens (of various ages) and 2 cockerels.

    We are averaging (even in this bitterly cold weather!) 5 medium eggs a day so average of 35 a week. When hubby is back from work he usually has a list of orders to fulfill and we sell excess for £1 for 6.

    But he often goes away for weeks on end - so this month he'll be away for 3 weeks and my fridge is now full.

    I make cakes, and the usual omelette, eggs for breakfast or evening meal etc but what else can I do with them??

    They Never go to waste but I'm looking for other ideas, even freezable ones if anyone has any ideas?
    Cabot (0%) left to pay £2455 let the overpayments commence! :D
  • Gosh I wish I lived near to you! We go through close to 20eggs a week minimum - just for two of us!

    If you have freezer space you could perhaps separate them - use the yokes (baking/omlettes/with meals) and freeze the whites for use another time?

    Afraid I can't think of much else!

    Fresh pasta? Uses 1 egg per serving. Ice cream and homemade mayo also use a fair bit and at least you can freeze the ice cream and the pasta

    eggs benedict, pickled eggs, scrambled with salmon, boild, poached - hard boiled are good to serve with a keema, use them to bake with and sure there are lots of home made beauty treatments . If you have dogs they are good for the coats - eaten not applied to. Omlette and so much more

  • You can freeze egg whites.Just note on the container how many are in.

    To freeze egg yolks,it's best to beat in either a little salt or sugar,depending on what you plan to do with them.Again label how many are in the container and whether they're sweet or savoury.

    It's best to seperate eggs when freezing but I'm not sure why.

    You could also hard boil quite a few-they last for ages like that.

    Have you thought about making lemon curd-which uses fresh eggs.I have a recipe if you want.You can freeze lemon curd by the way,so making a big batch isn't a problem.

    There's nothing better than HM lemon curd.:)

    Ask around amongst your neighbours. I'm sure some of them would be glad to buy them. I love buying from my neighbour. Shop bought eggs are now only a last resort in winter when her girls don't lay as much.
