    I've been wondering the same thing, i've got like a kilo of turkey left and there's only two of us...haven't got anything in to make a turkey curry...not sure what else to do apart from sandwiches or another roast :confused:

    I've been looking around the recipe threads but I can't find anything that takes my fancy or I haven't got the stuff in to make it.

    Mix half and half mayonnaise and natural yogurt or cream. Use full fat/ low fat options depending on taste/ what's in the fridge/whether you're counting fat grams! Mix in some curry paste and some mango chutney or something like a spiced fruit chutney or even a dollop of apricot jam!
    Stir in leftover turkey pieces and some drained chopped tinned apricots or mango. You could add some flaked almonds too if you like.
    Quite rich, so a little goes a long way. Serve with salad, on a baguette, in a jacket potato or to accompany a simple rice salad.

    I have leftover turkey, carrots, red cabbage, mashed potatoes (didn't keep a close enough eye when par-boiling for roasting!) - this is going to be turkey casserole with mash for 6 tomorrow, and probably sandwiches for another couple of days.

    BUT - need some hints - bought far too many sprouts so I have a fridge full of peeled/trimmed raw sprouts. Can I part cook then freeze them?

    Do you think the casserole could be done in a slow cooker? Do you think my turkey will be okay because it's already cooked and cooled down again? I've got turkey, spuds, broccolli, cauli, parsnips, onions, leeks that I could make a casserole with? Thanks :)

    Chop a little onion very finely and gently fry with some garlic until soft. Add some finely sliced mushrooms and continue to cook. Dollop in some mustard, (french or wholegrain is good) and a splash of white wine or brandy, scraping up any bits that are sticking to the pan. Add leftover turkey and a tub of cream. Combine and simmer over a very gentle heat until turkey is heated thoroughly. Do not allow to boil! Good with rice and green veg.

    My turkey/veg is already cooked as well. It will be fine to reheat as long as you've refrigerated in-between. So my plan is - chop and fry an onion, add leftover gravy (make more from packet if there's not enough), chop everything else, add possibly with some frozen peas/sweetcorn, heat through for 15 mins and serve. (mash is going in the microwave)

    I'd think if you put cooked turkey in a slow cooker you'll end up with just strands in the gravy.

  • I bought a huge bird -16lb for just 7 of us. As you can imagine there is loads left. This was intentional.

    One breast has been eaten -lunch and supper yesterday.

    I stripped the carcase and bagged up the dark meat in 2 bags. That's now in the freezer. I shall use these for pie/curry/pilaff/soup/risotto/barley risotto/coronation turkey salad/turkey baked in a cheese sauce and veg (not all of these-just 2 or 3)

    The rest of the white meat is sliced and will be used for Christmas Lunch Hash for tea tonight. To make this fry an onion slowly in the leftover fat from the bird, add any leftover veg (roast potatoes, parsnips, peas, carrots in my case), let them get crisp. Add chunks of turkey, a bit of stuffing and a generous splash of leftover gravy. Let it all get really hot and then splash in some sherry, season and serve. Pass round any leftover bread sauce, cranberry sauce etc. Best meal of the year;)

    Obviously that won't use up all the white meat, so there'll be another meal of cold turkey, baked potatoes, chutney and winter salad on Saturday.

    Any remaining slices will be frozen and used for sandwiches for the kids' lunchboxes.

    The carcase (which is still quite meaty) is now in my largest pot with a couple of leeks and carrots and an onion. I shall probably use two lots of water to get as much stock as possible form the bones. I've broken them up to get all the goodness from them- don't forget that bone stocks are full of calcium. I shall use the stock for at least one meal of turkey and barley broth and the rest will be frozen for use in stews, soups, risotto etc.

    The fat -yes I save the rich fat that comes off the bird when it roasts. This will keep a while in the fridge and I shall use it for general frying operations in the coming weeks. It is particularly good for potaoes.

    Yeah my mum just said that as well....oooh don't know what to do now, I really want to use my slow cooker :rotfl: I think i'll probably just make the casserole in the pan, I don't want to end up ruining the turkey :rolleyes:

    Bronnie - I might try that as well....i've got enough turkey to do two dishes, think i'll make that tomorrow, thank :D
